It’s getting cooler so that means it is stout season! I had to smoke some ribs for a friends party so I decided it was time to crack a heavy hitting stout from Wicked Weed out of Asheville NC.

Appearance
This beer is dark like motor oil. I love the look of stouts they are clean with tan head that just hits differently that an IPA or lager.

Aroma
This a aroma bomb with tons of chocolate, bitter coffee and sweet vanilla. I poured the beer cold which mutes the smell but as I sat by the smoker and beer warmed up all these notes became more bright and complex.

Here’s a look at those ribs!

I went with baby back this time and used a mustard base with loads of paprika, garlic, salt and pepper.

Taste
Guilt Pleasure is a series of beers that Wicked Weed have released. This beer is the espresso and cheesecake variant. I like the flavor profile. It’s coffee forward with the bitter and roasted notes. The cheesecake favor was mildly sweet with some vanilla. I get a lot of traditional stout flavors as well. The flavor masks the higher ABV well which makes this a dangerous beer to be sipping on while cooking.

Mouthfeel
It’s fairly thick so it’s got a bit of chew to it. I love a thick stout and it fills you up and compliments the flavor. There’s not much carbonation and that’s why it’s so thick. There is a slight alcoholic burn on the back of the throat.
