What Should We Eat for a Healthy, Vibrant Life?

If there's one thing I hate is people lecturing me on diets. Whether you are vegan or meat eater, lactose intolerant or allergic to peanut butter, it's all the same to me. People have got to make their own informed choices about what they put in their mouths and what is good for me might be a terrible choice for someone else.

So it's pretty hard to answer the Ecotrain QOTW, partnered with @dreamport, about what the best diet is to be healthy and vibrant - it's different for everyone. Take this pumpkin for example. Fresh, organic, homegrown, pesticide free, loved - a good roast pumpkin soup with spices and garlic is going to help MY immune system and ward off colds. My husband? He'll get a stomach ache and moan about being shit all week. Man pumpkin flu, or an intolerance to pumpkin, or both?

There's two things I believe make a healthy diet that lends vibrancy and vitality to ones life, and both are conscious eating. Say whaaaa???

Well, you have to look what being 'conscious' is, and it's really about listening to your body, and paying attention to where your food comes from.

I have a little bit of intolerance for people that eat a lot of junk food, know it's bad for them, and then complain that they feel unwell all of the time. There's a lot of information out there that says the very least you can do to improve your healthy is to eat the rainbow (lots of different coloured vegetables) and to limit salt and sugar, if not cut sugar out at all costs, because it's known to be inflammatory. I know I sound super judgey and I apologise - in real life, I'm a lot more understanding - I promise. Poverty, lack of education, psychological stressors and all kinds of things can influence what we do, and don't, put in our mouths. I do get it.

If we're struggling to pay attention to our lifestyle choices, we're going to find the second part of being 'conscious' about your food a little harder. I'd argue that eating a rainbow is more important for some than eating an organic, homegrown, locally produced rainbow, because it's a good starting point and sometimes it's all people have access to, especially when those foods are sold at a premium due to greenwashed marketing strategies.

But paying attention to where your food comes from matters. There's a huge difference between eating a carrot from the supermarket that's grown with pesticides and in depleted soil than one grown at home in rich compost. The bacteria in your soil actually make your food taste better and supply many more nutrients than the one grown via intensive farming methods. Don't take my word for it - there's plenty of studies out there that prove this to be true. So that old complaint that tomatoes used to taste better in the old days is true - they did. Less chemicals. More stuff in the soil working in symbiosis with the plant. So if you can, grow your own. You'll get the added benefit of adding to your gut biome as well through interactions with the soil biome. Not woo woo. Science.

In the end, you can have your keto vegan diet and still feel sick. You can eat the rainbow and drink too much and never get your gut health right. You can be vegetarian and eat far too much cheese and salt and processed meat products. You can consume tons of raw smoothies and have too much fructose from sugar. If it was that easy, we'd all be doing it.

But there are starting points that can lead to a more healthy, vibrant life, and I think it starts with eating a really varied diet, full of different fruits, vegetables, nuts and grains, and not eating too much processed sugar or drinking too much. And of course, let's not get too crazy about it - we also have to enjoy life. I sure as hell love an almond croissant with my coconut milk latte after a surf, or a cheesey toastie on a cold winter's day.

If you're feeling crap all the time, go back to basics - eat really simple foods and then add things gradually. Notice what works for you and what doesn't. It's how we noticed my husband had a terrible stomach issue because of garlic and onions - a FODMAP diet made a massive difference in his life. Now he can tolerate it once or twice a week with no issues. I even think he'd be okay with that pumpkin, but I'm not keen to try - you haven't heard what a noise a man with pumpkin man flu makes.

And this one is just for @eco-alex - a bit of vegan junk food. It's a jackfruit gyros with fries. Seriously, life is sometimes for living. You can't be a food purist all the time.

My dfather in law says that fruits have a bad impact on his gut and heart health. He is the first whom a I have heard saying that fruit can be unhealthy. .... But that's true all of us are different with different needs of the bodies and perhaps the different immunity to different things. There are some people who eat everything (the fat, fructose, a lot of carbohydrates) and are still healthy and vibrant, on the other hamd there are some other who struggle with their health despite being very careful about what they eat.

Glad I made you laugh! It's amazing how some people eat nothing but burgers and chips and coke and still seem vibrant!! I start freaking out if I haven't eaten vegetables for a day!

I was always taught to not eat too much fruit because of the sugars. I guess moderation in all things is key, right?

Amazing, indeed. Perhaps the effects of eating are not just about what we eat but also what we tell our mind what we eat. My husband says "Don't think this much before eating. You wanna eat it, eat it."

I really like your down to earth approach to healthy eating AND think it's high time I cut out sugars and eat more rainbows! It's my own fault that my reflux is out of control so am going to be obedient to my body and take note of what should go in and what should NOT go into the shopping trolley. The pesky monkeys eat all the veggies, even know there's something edible when it comes to carrots that's hidden underground!
They don't touch tomatoes, and the homegrown ones indeed are way sweeter than those bought in the supermarket! My veggie vendor's produce comes straight from the market so at least is saved from over-refrigeration, but still mass-grown!

hey! i thought id share a possible great tip! i was watching an amazing guy on youtube who was explaining that reflux is often due to not enough acidity in the stomach.. which causes the sphincter to not work.. as crazy as it sounds, he says if you have a table spoon of apple cider vinegar it can resolved it instantly.. perhaps it helps..

I'm actually wondering if the reflux meds (a proton pump inhibitor) from the doc is all that good for me!
I will try the Apple Cider vinegar before a meal and see how it works. I used to have it with water in the morning, they say that whatever is bitter or sour to the mouth is good for the stomach as it helps keep the body alkaline. When I avoid sugary and fried foods my reflux is much better.
The problem is the burning throat causes upper respiratory inflammation which I treat with home remedies but if it gets too bad, then I need antibiotics! It's a real pain!

Oh no reflux is terrible. This is another example about body diversity... There's a heap of things you can't eat because it messes with your reflux!

In Tasmania all the gardens are covered to stop the wildlife eating it. I imagine it'd be hard to keep a monkey out!!!

We can only do our best in finding good food to eat.. no need to feel bad if we can only eat mass produced. Eating the rainbow ensures our body gets the variety of nutrients it needs!

wise words! yes.. we all need different things.. and as much as what we eat .. the quality of what we eat is pretty fundamental.. as im sure you agree.. you cant beat homegrown organic!

i am indeed salivating at your vegan junk wrap.. fortunately i had enough this past two months to keep me going .. right now ive had to go Super simple and healthy.. rice n dhal and ragi basically until i start to regain something resembling normal.. even if we eat healthy.. best not to eat too much of it! ho ho..

Absolutely- I totally agree on n my any points here. It is all so personal - good got the goose bad for the gander. However use common sense - if it is not used - no complaints- wee we are all over- informed.
The Jack fruit gyro looks heavenly.
Btw - I love the versatility of jackfruit. I am looking forward to the day when I can make a dish from the fresh fruit not a can.

Well said @riverflows and so very true. As long as we eat a healthy diet that suits our body all is good. And if we eat too much salt and sugar then it is suffering time. All a choice as is exercise and getting out into nature. What I like to do does not mean others do.
But for me, feeling good physically is a priority.

Oh, that Gyros looks delicious! So do most other food stuff that you post.

And I like your expression of eating the rainbow. And with all that diversity it's still important to focus on quality, while keeping in mind what chemicals and heavily processed foods can do to us. I remember in college, having frequent discussions about whether MSG addiction can be real, or is just a conspiracy theory, while at the same time ordering Chinese takeout - particularly General Tso's Chicken - several times a week. And you're absolutely right: with all that focus on "listen to what your body tells you" approach in my own post, I should not forget that the body can indeed be corrupted. So maybe the best ground rule should be avoiding poisons in our food.
