Happy Easter

Hi everyone!

Every now and then I like to crawl out of my cave and write something here. It has been a while since the last time I did, but I really wanted to show you all the cakes I made for Easter this year. I've kind of outdone myself this time so I figured you would like to see it as well:)

We had planned to spend the 1st day of Easter @rubencress his parents' house. It's a pretty big family when all of his siblings, nephews, and nieces are there, so whenever there is an occasion that everyone attends, I get the opportunity to go big with a cake.





The inspiration

A few weeks ago I got inspired by a cake design I saw on Pinterest. I really wanted to see if I could recreate something like that particular cake. I usually don't make an exact copy of something, so I only used the design and switched up the flavors. Since Spring is arriving and the weather is slowly starting to get better, I wanted to bake something with berries. I couldn't really decide if I wanted to use blueberries or raspberries, but I eventually went for blueberries since that's where I'm most familiar with taste-wise. I'm a girl of habit you see:p.

I had a couple of ideas that I played with, but I eventually went for a 3-layer (naked) Blueberry Lemon Cheesecake. Three layers of lemon sponge, covered in blueberry jam and cream cheese frosting. I've mentioned before that I'm more of a chocolate, caramel, and vanilla girl, but those three flavors just belong together chef's kiss. I went for a naked cake because I didn't want it to be too heavy and sweet.





The golden egg saga

The cake that I wanted to recreate had golden chocolate eggs on top. I found that a really cool detail, so I also wanted to add that. I searched online for golden chocolate eggs but couldn't find them anywhere. I also went to local grocery stores, but unfortunately, they were nowhere to be found. I almost wanted to ditch the whole idea, but then I thought of painting regular chocolate eggs myself. So that's how I ended up spending a whole afternoon painting white chocolate eggs with edible golden paint. Some people would call me crazy, but at least I don't give up easily xD





The colors of Spring

Golden white chocolate eggs, blueberries, fresh thyme, and real primrose. It looks so fresh and Springy together with the white cream cheese frosting. I'm really pleased with how it turned out, especially since it was the first time creating something like this one. Even though it looked as I had in mind, I was a bit worried that the sponge would be too lemony. That wasn't the case at all, and as I mentioned above, the flavors combined very well. Overall, the cake was a big success!

This is wicked. I made some white chocolate glaze to top some fruits (blueberries, raspberries & strawberries) cuz my dad can't have all this and that.

Makes for a picky eater, but he dug it, so I was proud of myself. I'm notorious for liking burgers and only being able to "cook" cup ramen and fry an egg- but lately, I'm stepping out of my comfort zone.

Nice to see what you're up to and admittedly, the cake looks remarkable.

Thank you!:D Oewww, white chocolate and berries is a killer combination. And it contains fruit so kind of 'healthy' as well;) It's nice to try out new things every now and then, but sometimes nothing tastes better than a burger, so I can't blame you there haha.

Oh wow, what a creation, it looks amazing. I love lemon in a cake and with blueberries yum.
