Hello beautiful people. I hope your day has been awesome. Mine has been anyway. Yes, tonight I'll be talking about my native (Nigerian) locally made soup called 'Efo Riro" Yaaaaayyyyy

What is Efo riro?

Efo riro is a rich vegetable soup that is mostly loved by the Yorubas (Western Nigeria). Efo Shoko or Efo Tete (Green Amaranth) are the vegetables that can be used to cook this soup. They are available in Nigeria markets. But If these are not readily available around you, leafy or frozen spinach is a very good substitute.

Recipe

•Palm oil
•Onions
•Tatashe and Rodo(Peppers)
•Locust beans( Iru)
•Crayfish
•Stock cubes
•Beef
•Shaki (cow tripe)
•Smoked fish
•Dry fish
•Stock fish
•Efo(Vegetables)
•Salt (to taste)

Note that the more the variety of meats and fishes you can add to Efo Riro, the better. So feel free to add Snails, Ponmo (cow skin) and the likes.

Also note that
•If you are using the hard stock fish, soak it for a few hours. Soak the dry fish till soft and debone.
•Cut the leafy vegetables
•Deseed the tatashe and grind till coarse.
•Prepare other ingredients: pound/blitz the pepper, dice the onions and grind the crayfish.

Now let's cook

Start cooking the shaki first because it is the toughest meat in the bunch. Note that this soup should have as little water as possible so add little quantity of water at a time and top it up as you cook.

When the shaki starts to curl, add the dry fish and stockfish.

When the shaki is almost done, add beef, stock cubes and some of the onions and cook till all the meats and fishes are well done. Now, set that aside.

In another pot, pour the palm oil and heat it up. Once hot, add the remaining onions.

Fry the tatashe and rodo peppers in the oil till there's no more water in it.

Add the locust beans, crayfish, and stir very well.

Add the cooked meat and fishes, then stir very well.

Now add the vegetables, add salt to taste, stir very well, cover and once it heats up again, leave it for some minutes and then take the pot off the stove.

FOOD IS READYYYYY

You can serve Efo Riro with Semolina, Amala, Eba, Fufu and even White rice. But ofcourse I love mine with Pounded Yam( Iyan). The one pounded with mortar and pestle. Lol
