Butternut Squash, Spinach, Chick Pea and Feta Stew with a fuck load of spices.... YES!

I'm not usually one to post recipes, but MAN I cooked a smashing dinner tonight, mainly thanks to this bad boy butternut squash:

And an absolute fuck load of spices and a whole lot more FETA than the recipe I adapted suggested, seeing as that i didn't quite have all the ingredients required!

Below is an outline of said recipe and the process, I THOROUGHLY RECOMMEND giving this a go!

Serves TWO!

INGREDIENTS...

  • Enough olive oil for roasting and frying
  • Half a butter nut squash 250g butternut squash, peeled and chopped into large chunks
  • 2 tomatoes1 tbsp thyme leaves
  • 3 garlic clove, crushed
  • 1 onion, sliced
  • As many chickpeas as you see fit, drained
  • 1 bay leaf
  • 1 tbsp ground each of ground cumin and cinnamon
  • ½ tsp turmeric
  • 300 ml vegetable stock
  • 150g feta, crumbled
  • 1 lemon, zested
  • 2 tsp fennel seeds
  • Spinach - lots

Method

All in takes around 40 minutes, and that includes peeling and chopping the squash, which is the biggest job TBH, and just enough time for the oven to preheat for step one:

STEP 1: Roast

Heat oven to 200C roast that bad boy butter nut squash for around 30 mins, add in the tomatoes after 10 mins.

Step 2: Fry and Simmer

Fry the thyme, garlic and onion, ground cinnamon, cumin and turmeric, add chick peas and stock, let cook for as long as it takes the above veg to roast.

Step 3: Feta!

Put the feta in a small bowl and add a teaspoon of olive oil and lemon zest. Mix well and set aside.

Step 4: Toast

Toast the fennel seeds in a frying pan for 1 min, set aside

NB I'm not a total slob, I use my old cereal packets for lighting fires, hence why it's sitting in the corner!

STEP 5: Finishing

Add the roasted veg and spinach to the stew and cook for 2 mins....

NB It's a very minimalist way of cooking - you're basically just frying the onion and spices for a few minutes (in the order above), then adding the chick peas and minimal stock and cooking the whole lot for around 20 minutes while the the veg roasts, then adding those plus the spinach...

STEP 6: SERVE

Put the stew in a bowl and top with a scoop of feta, and a sprinkling of fennel seeds....

I had mine on a bed of rice cooked with Turmeric, lordy it was delicious!

Final thoughts: pretty much the perfect recipe for a 30-40 minute cook....

Besides being absolutely delicious and nutritious this is a great recipe to keep you busy for 30-40 minutes, without being stressed... once the veg are roasting there's just about enough time to get everything else done, including putting some rice on, before the veg are roasted and the meal's complete!
