I like to make homemade tomato sauce. I find its flavor subtle and exquisite, and it can be combined with other vegetables. For dinner, I made a tomato sauce with peppers to accompany two pieces of chicken breast. The protein is moistened in the sauce, making it an absolutely delicious meal.


The only recommendation is that, since it is homemade tomato sauce, it needs to be simmered long enough. It is not a quick recipe, but it is easy to make. Once you get used to it, there is no way you will stop making your sauces this way.
- One skinless, boneless chicken breast
- Three ripe tomatoes, peeled, seeded, and chopped into small pieces
- One large red bell pepper, chopped into small cubes
- One clove of garlic, minced
- One small onion, chopped into small cubes
- Two bay leaves
- Fresh basil leaves
- Oil for frying
- Salt and pepper, to taste
- Water, as needed


✓ Season the chicken on all sides with salt and pepper.

✓ In a hot pan with oil, sear the chicken on both sides, then remove the chicken pieces from the pan and set aside.
Add the onion and garlic to the same pan and sauté for a couple of minutes, taking care not to burn the garlic.


✓ Add the tomato, pepper, bay leaves and water. I added two cups of water because I wanted a lot of sauce, but a good measure is one and a half cups of water.

✓ Cook for at least 50 minutes over low heat with the pan covered.

✓ Add the chicken, pepper, and salt. This is the ideal time to adjust the sauce. You can add oregano if you like, or adjust the acidity with sugar (only if the sauce is too acidic).

The chicken will finish cooking in the sauce. To do this, leave it for at least twenty minutes over medium heat, turning the chicken pieces so that the flavor is even throughout.

✓ Turn off the stove and serve with fresh basil leaves.

Pollo en Salsa de Tomate y Pimiento
Me gusta hacer la salsa de tomate casera, encuentro que su sabor es sutil y exquisito, además se puede combinar con otros vegetales, yo para la cena hice una salsa de tomate con pimiento, la hice para acompañar dos piezas de pechuga de pollo, aquí la proteína queda humectada en la salsa, es una comida absolutamente deliciosa.


La única recomendación es que al ser una salsa de tomate casera, es necesario dejar que se cocine lo suficiente a fuego lento, no es una receta rápida pero sí es fácil de hacer, una vez que te acostumbras ya no hay manera de que dejes de hacer tus salsas de ésta forma.
- Una pechuga de pollo, sin piel y deshuesada
- Tres tomates maduros, pelados, sin semillas, picados en trocitos pequeños
- Un pimiento rojo grande, picado en cuadritos pequeños
- Un diente de ajo picado
- Una cebolla pequeña picada en cuadritos pequeños
- Dos hojas de laurel
- Hojas de albahaca fresca
- Aceite para freír
- Sal y pimienta, en la cantidad necesaria
- Agua, en la cantidad necesaria.


✓ Salpimentar el pollo por todos lados.

✓ En un sartén caliente con aceite sellamos el pollo, por ambos lados, y retiramos las piezas de pollo del sartén y reservamos.
En la misma olla añadir la cebolla y ajo, salteamos por un par de minutos, no dejemos quemar el ajo.


✓ Agregar el tomate, pimiento, hojas de laurel y agua, yo añadí dos tazas de agua porque quiero que se haga mucha salsa, una buena medida es una taza y media de agua.

✓ Cocinar 50 minutos mínimo, a fuego lento, con el sartén tapado.

✓ Agregar el pollo, pimienta y sal, es el momento ideal para hacer correcciones a la salsa, puedes añadir orégano si deseas, también puedes corregir la acidez con azúcar (solamente si está ácida la salsa).

El pollo se terminará de cocinar en la salsa, y para esto lo dejamos un mínimo de veinte minutos a fuego medio, le damos vuelta a las piezas de pollo para que el sabor sea igual en todas partes.

✓ Apagar la estufa y servir con hojas frescas de albahaca.
