Speaking of brandy, many people in Europe may think of the well-known cognac and armagnac. While today I'd like to invite you on a distilling and tasting tour of pisco, another brandy popular in the Americas.

There has been disputes over whether pisco originated in Chile or Peru. Both countries consider it to be their national drink. I visited Capel's pisco distillery in Vicuña when living in Chile.

It's located in Coquimbo, one of the two official D.O. (Denomination of Origin) regions established by Chilean government. Another D.O. region is Atacama. Both of them have dry and hot climate that is ideal for growing grapes and producing pisco.



说起白兰地,人们常会先想到干邑cognac。因为人头马Remy Martin、马爹利Martell、轩尼诗Hennessy和拿破仑干邑馥华诗Courvoisier这几大法国白兰地巨头声名在外,都是宣传行销推广的典范。

还有同样来自法国西南的雅文邑armagnac在欧洲也很有名,被称为最早的"生命之水"(因为白兰地开始是作为药物而被蒸馏出来使用),前些天刚经过了这块地区。

我们今天就来看看在美洲挺受欢迎的一种白兰地,叫作皮斯科pisco。关于这种酒的起源,智利和秘鲁一直争论不休,都说自己才是最早发明皮斯科的地方。秘鲁还有个名为皮斯科的港口,早期的皮斯科酒大量从那里出口到海外。

我去参观的这个卡佩尔酒厂在智利官方指定的两个特产地之一科金博地区,另一个是阿塔卡马。这些地方常年炎热干旱,种植有大片酿酒使用的麝香葡萄。

皮斯科的酿造过程通常是先把葡萄碾碎发酵,让有益的微生物生长繁殖,然后在容器中蒸馏得到高浓度的原浆,最后装入橡木桶中慢慢陈酿,一般酒精度为40左右。

参观结束后,我们还品尝了几种皮斯科鸡尾酒,其中最有名的要属皮斯科酸酒,被智利和秘鲁宣称为各自的国酒。它由皮斯科酒、蛋白、酸橙汁和糖浆制成,顶层充满泡沫。还有一种含有菠萝汁的pisco punch,最早出现于19世纪的加州旧金山。

皮斯科酸酒在南美特别是智利和秘鲁非常普遍,在那边生活期间,下班后或聚会时经常看到大家在喝。开始时出于好奇我还浅尝辄止,后来实在受不了那强烈的酒精,干脆直接乖乖地喝virgin版XD,也习惯了无数次被取笑为cheap date,到最后常常是众人皆醉我独醒的神奇场面。还有朋友问我总是那么清醒不觉得痛苦吗,哈哈,我竟无言以对。。。
