There is no way that someone will give you a textbook with a thousand recipes, and you can copy them exactly, no matter how well explained they are, there is something that will always be fundamental, The Soul and the Energy put into every dish.

For this reason I am not a person who follows recipes, I am more of those who improvise having my tastes and my humor as a foundation.

As a child I was always excited every time I went to my paternal grandmother's house, she spoiled me with her food and as a cook she had everything.

From her I learned that love is transmitted by sharing what you cook, and even though I didn't have much, there was never a lack of a plate on the table for whoever came.

Her preparations were extremely simple, the food in villages is usually basic and how to economize is fundamental, in the case of ingredients it is best to use only the necessary. This is how I learned my first cooking lesson, "It doesn't matter what ingredients you have, if you feel the essence in each element, even one tomato can be enough to make a delicious dish".

Sometimes people ask me "Irene, how did you learn to cook?" expecting a professional answer. "Oh, of course I studied at the best culinary institutions", and the truth is that no, it's always enough for me to say that I have a good palate and a lot of imagination.

I'm new at uploading recipes to the internet so it was only recently that I realized that I, by myself, never follow a recipe, my dishes adapt to the environment, it doesn't matter if
I have a lot of ingredients or if I don't have so many, the important thing is to adapt, and for that you just have to let yourself go, and literally in the kitchen is the only place where letting yourself go is very simple.

Yesterday after a couple of days of bed rest, I woke up with a lot of desire to eat something nice and looking for options in the fridge, I noticed that I had some Cambures (bananas), which were already quite ripe, because a couple of days ago we bought at a bargain of 5kg for 150,000Bsf (approximately 0.73 cents) and were so many, that we could not eat enough before they were ripe.

So without more than the desire and the good disposition to cook a rich dessert, I entered my most beloved corner of the house "the kitchen" I decided to document the process with photos to give you a sample of my day to day, where I just improvise.

No hay manera de que alguien te de un libro de texto con mil recetas, y tu las puedas copiar exactamente, por muy bien explicadas que estén, hay algo que siempre va a ser fundamental, El Alma y la Energía puestas en cada platillo.

Por esta razón yo no soy una persona de seguir recetas, soy mas de las que improvisan teniendo por fundamento mis gustos y mi humor.

De chiquita siempre me emocionaba cada que iba a casa de mi abuela paterna, ella me consentía con su comida y de cocinera lo tenia todo.

De ella aprendí que el amor se transmite compartiendo lo que cocinas, y a pesar de que no tenia mucho, nunca faltaba un plato en la mesa para el que llegara.

Sus preparaciones eran en extremo sencillas, la comida en pueblos suele ser básica y como economizar es fundamental, en el caso de los ingredientes lo mejor es usar solo los necesarios. De esta forma aprendí mi primera lección de cocina, "No importa que ingredientes tienes, si sientes la esencia en cada elemento, hasta un solo tomate puede ser suficiente para hacer una delicia de platillo".

Aveces hay quienes me preguntan "¿Irene como aprendiste a cocinar?" esperando una respuesta de tipo profesional... "Oh claro que estudie en las mejores instituciones culinarias", y la verdad es que no, siempre me basta con decir que tengo un buen paladar y mucha imaginación.

Soy nueva subiendo recetas a internet por lo que apenas hace muy poco fue que me di cuenta de que yo de por si, jamas sigo una receta, mis platos se adaptan al entorno, es igual si tengo muchos ingredientes o si no tengo tantos, lo importante es amoldarse, y para eso solo hay que dejarse llevar, y literalmente en la cocina es en el único lugar donde dejarme llevar es muy sencillo.

Ayer después de un par de días de reposo en cama, desperté con muchas ganas de comer algo rico y buscando opciones en la nevera, note que tenia unos Cambures (bananos), que ya estaban bastante maduros, pues un par de días atrás compramos en una oferta de 5kg por 150.000Bsf (aproximadamente 0,73 céntimos de dolar) y fueron tantos, que no alcanzábamos a comer suficientes antes de que se maduraran.

Así que sin mas que las ganas y la buena disposición para cocinar un rico postre, me adentre en mi rincón mas querido de la casa "la cocina" , y decidí documentar con fotos el proceso para darles una muestra de mi día a día, donde solo improviso.

Banana Bread

I had already tried to make banana bread once so I had an idea of what to make and even though I was missing a couple of ingredients I knew these I had would do.

The butter I used was given to me, it was the kind sold in bulk and I can't really recommend it for any dessert (or anything else) because it doesn't melt but separates into a thousand little pieces and I didn't know until I used it. I usually use margarine and when I have it I always prefer coconut or sunflower oil.

Of course, all the other ingredients are usually basic to me... a little mid-afternoon dessert never hurts.


The first thing I did was to make a puree with the cambures, trying to make them look good, it doesn't matter if there are lumps, that usually falls apart in the oven.

If it were a recipe that I was going to share with more people, and I wanted to make sure of the perfect result, I would beat the eggs, butter and sugar separately, but in this particular case I found myself with little water available for washing dishes, so I saved time and space by mixing everything in the same bowl.

As the cambures are used well ripened the mixture is usually slightly sweet, so the best thing to do is to try it, using a cup of sugar seemed to me to be enough.

In the case of the flour, there is no specific measurement so I added and sifted until I found the consistency I wanted, this was about 2 and a half cups.

For me any mix of pudding, cake or cookies, must have vanilla and cinnamon, and now that I think about it, I add this couple of ingredients to almost everything, coffee, juices, pancakes, rice pudding, among others, and recently I discovered its use in Indian cooking, so from time to time I can add cinnamon to the rice.

The Chocolate, Love of my Loves, my life is complete when there is a piece of chocolate in some recipe, and if the preparation does not take I look for the way to add it.

The first time I prepared this pudding, I made it as a base, without chocolate, and its flavor seemed to me super intense, so to balance it I assumed that chocolate was necessary, I use 70% chocolate, that is, dark, without milk so that it contrasts its bitterness with the sweetness of the cambur.

Once everything is well mixed, just flour the pan, and leave in the oven for about 50 minutes, perhaps a little less if your oven is very strong or a little more if it is very weak.

PS: I tried to take a nice picture hahaha since I'm one of those who eats the cakes before taking a picture; this capturing moments is quite new to me, since I like to remember feelings and not visuals.

With this post I wanted to make people see the reality behind my recipes, rather than give them a script to cook my way.

Budín de Banana

Ya en una ocasión había intentado hacer pan de bananas así que tenia una idea de que hacer y aunque me faltaban un par de ingredientes sabia que estos que tenia me servirían.

La mantequilla que emplee me la regalaron, era de las que se venden a granel y realmente yo no la puedo recomendar para ningún postre (ni para nada) debido a que no se derriten si no que se separa en mil pedacitos y no lo supe hasta que la use. Yo suelo usar margarina y cuando tengo siempre prefiero el aceite de coco o de girasol.

Del resto todos los ingredientes suelen ser básicos para mi... un postrecito a media tarde nunca cae mal.


Lo primero que hice fue hacer un puré con los cambures, buscando que quedaran bien pisados, no importa si quedan grumitos, eso suele deshacerse en el horno.

Si se tratase de una receta que fuera a compartir con mas personas, y me quisiera asegurar del resultado perfecto, batiría los huevos, la mantequilla y la azúcar aparte, pero en este caso en particular me encontraba con poca disposición de agua para lavar platos, así que economice tiempo y espacio mezclandolo todo en el mismo cuenco.

Como los cambures se usan bien maduros la mezcla suele quedar ligeramente dulce, entonces lo mejor es ir probando, usar una taza de azúcar a mi me pareció suficiente.

En el caso de de la harina, no hay una medida especifica por lo que yo fui agregando y cerniendo hasta encontrar la consistencia que quería, esto fueron 2 tazas y medias aproximadamente.

Para mi cualquier mezcla de budín, torta o galletas, debe llevar vainilla y canela, y ahora que lo pienso bien, casi a todo le agrego este par de ingredientes, café, jugos, panqueques, arroz con leche, entre otros, y recientemente descubrí su uso en la cocina hindú, por lo que de vez en cuando le puedo echar canela al arroz.

"El Chocolate" Amor de mis amores, mi vida esta completa cuando hay un trocito de chocolate en alguna receta, y si la preparación no lleva yo busco la forma de sumarlo.

La primera vez que prepare este budín, lo hice como una base, sin chocolate, y su sabor me parecio súper intenso, así que para equilibrarla supuse que era necesario el chocolate, yo uso chocolate al 70%, es decir, obscuro, sin leche para que contraste su amargor con lo dulce del cambur.

ya una vez que todo esta bien mezclado, solo queda enharinar el molde, y dejar en el horno durante 50 min aproximados, quizás un poco menos si tu horno es muy fuerte o un poco mas si es muy debil.

Para concluir este fue el resultado de este delicioso e improvisado postre.

PD: trate de buscar tomar una linda foto jajaja ya que soy de las que se come las tortas antes de fotografiar; Esto de capturar momentos es bastante nuevo para mi, ya que me gusta mas recordar sentimientos y no visuales.

Con este post queria hacerles ver la realidad detras de mis recetas, mas que darles un guion para cocinar a mi manera.

Hahah - the behind the scenes photo of Jose is absolutely priceless. Love it. I'm with you - cooking from inuition and heart is where it's at. I can't follow recipes if I tried.

In fact, I taught my son to cook by saying 'a dash of that', a 'sploodge of this' - no that's not an englihs word, it's just a sound - taste this, taste that - sprinkle - what do you feel would go well here? And he's an awesome cook. xx

Jajajajaja is a photo that we thought should not be missing Jajajaja, the reality behind it is priceless 😅

That's exactly how you learn! For me it's about looking for the ingredients when you taste the final result and that's how it is recorded in your memory for when you will cook.

When I would ask my grandmother how to do it, she would say: watch what I do and if you don't learn by watching... taste what you eat!

Someday I will have the honor of cooking something for you, we will surely have a concert, and I will be with a food stall Jajajaja preparing arepas!

Siempre mi ayuda está a la orden para cualquier consejo jeje! El chocolate en especial con el cambur hace magia en el paladar! Es una receta súper sencilla y no necesita huevo, así que también es barata y bastante adaptable a cualquier momento en el que no tenemos todos los ingredientes.

Beautiful read. You have a wonderful talent worthy to be shared.

Cooking is an art too, it's not only about cups and tablespoons of what, sometimes it's also about adding personal flair (flavor, emotions, love) into the cooking process.

When cooking something I don't cook everyday, I will research a bit and look at the recipe, but don't necessarily follow it gram-by-gram.

You just know what to adjust when an ingredient is lacking, or you just feel when something is lacking and find workaround, the there's that gut feeling that it's done—it's perfect. Haha!

Me E N C A N T A !!!! de verdad que yo amo con locura el cambur, platano, banano, entre otros nombres que se le puede dar.. pienso que es una de las frutas que mas energia y potasio te aporta al cuerpo... me pregunto si podria hacer un pequeño cambio a tu receta? ahorita me encuentro en dieta especial porque debo controlar mis niveles de insulina (ojo no tengo diabetes)... en vez de agregarle azucar refinada ese rico pudin o torta cambiarlo por miel o papelòn (piloncillo)... se podrá? Se ve delicioso... riquisimo... SAludos... besos y abrazos...

Siiiii! Claro que si! Yo te recomendaría quitarle el huevo y el azúcar, puedes ponerle cualquier endulzante, papelon, azúcar morena o mascabado, agave, lo que prefieras.... igual no necesitas mucho dulce si usas los cambures bien maduros.

En cuanto al huevo, puedes cambiarlo por linaza, o simplemente en lugar de mantequilla usar aceite!

Hace un tiempo lleve una dieta bastante estricta y mi receta para tortas era la que te acabo de mencionar, así que espero te guste mucho y puedas disfrutarlo! Un abrazo!
