A lo largo de toda mi carrera gastronomica he tenido la oportunidad de dar clases a medicos, nutricionistas o simplemente a personas de avanzada edad con deseos de aprender y enseñar. Todos obviamente tienen distintas opiniones sobre lo que es sano y lo que no lo es, aunque hay algo en lo que todos concuerdan y es en el hecho de que la mayoria de las personas confunden "Alimentos Sanos" con "Alimentos Medicinales". Algunos medicos afirman que a pesar de que comer alimentos saludables o sanos ayuda mucho a mantener nuestras defensas altas y fortalecer nuestro sistema inmune, esto no necesariamente significa que sean medicinales.

Throughout my entire gastronomic career I have had the opportunity to give classes to doctors, nutritionists or simply to elderly people with a desire to learn and teach. Everyone obviously has different opinions about what is healthy and what is not, although there is something that everyone agrees on and that is the fact that most people confuse "Healthy Foods" with "Medicinal Foods". Some doctors affirm that although eating healthy or healthy foods helps a lot to keep our defenses high and strengthen our immune system, this does not necessarily mean that they are medicinal.

Por ejemplo, la semilla de la planta Oryza es un alimento bastante basico en muchas culturas a nivel mundial y se considera un alimento sano por sus grandes propiedades. Si, estoy hablando del Arroz, el segundo cereal mas producido a nivel mundial (El primero es el Maiz y el tercero es el Trigo). Y es que el Arroz por si solo constituye una gran fuente de energia debido a su alto contenido de almidon, dado que eventualmente se convierte en azucares para nuestro organismo, tambien posee aminoácidos escenciales que junto con su alto contenido en fibra ayudan a un mejor metabolisto y por consecuente un mejor funcionamiento del aparato digestivo.

For example, the seed of the Oryza plant is a fairly basic food in many cultures worldwide and is considered a healthy food for its great properties. Yes, I am talking about Rice, the second most produced cereal worldwide (The first is Corn and the third is Wheat). And it is that Rice alone constitutes a great source of energy due to its high starch content, since it eventually becomes sugars for our body, it also has essential amino acids that together with its high fiber content help a better metabolism. and consequently a better functioning of the digestive system.

A lo largo de la historia se ha estudiado mucho el arroz y se ha llegado a la conclusion o al menos muchos cientificos concuerdan en que existe una relacion directa entre el crecimiento de una poblacion con el cultivo del arroz, esto debido a que puede ser un alimento de sustento. En palabras mas simples, el arroz puede ser a corto y mediano plazo un alimento que por si solo te permitiria seguir viviendo sin un tener un deterioro considerable, entonces las comunidades o poblaciones de recursos bajos han logrado sobrevivir a base de arroz el tiempo suficiente para lograr aprender otros metodos de agricultura y caza, logrando asi una evolucion mas adecuada. Lo contrario ocurrió en algunas comunidades ya extintas que su alimentacion basica constaba de solamente ciertas frutas por ejemplo, eventualmente su deterioro fue tal, que terminaron muriendo por inanicion.

Throughout history, rice has been studied a lot and it has been reached the conclusion or at least many scientists agree that there is a direct relationship between the growth of a population with the cultivation of rice, this because it can be a sustenance food. In simpler words, rice can be in the short and medium term a food that by itself would allow you to continue living without having a considerable deterioration, then the communities or populations with low resources have managed to survive on rice long enough to manage to learn other methods of agriculture and hunting, thus achieving a more adequate evolution. The opposite happened in some already extinct communities that their basic diet consisted of only certain fruits for example, eventually their deterioration was such that they ended up dying of starvation.

Ahora, a pesar de sus grandes propiedades y beneficios para la salud, NO es un alimento medicinal, ya que no cura ninguna enfermedad o dolencia especifica. Si, ayuda al tratamiento de algunas enfermedades, mas comunmente a enfermedades relacionadas con el ambito digestivo. No obstante segun Wikipedia y cito textualmente; "Medicina (del latín medicina, derivado a su vez de mederi, que significa ‘curar’, ‘medicar’)..." vendria siendo la ciencia que se ocupa del estudio de enfermedades con la intencion de otorgar una cura en Pro de la salud para asi alargar la vida. Esto quiere decir basicamente que un alimento Medicinal debe por regla general curar algo y ser el tratamiento unico para un problema especifico, ya sea una enfermedad, dolencia o cualquier tipo de problema que conlleve una consecuencia directa al deterioro no natural del cuerpo.

Now, despite its great properties and health benefits, it is NOT a medicinal food, as it does not cure any specific disease or ailment. Yes, it helps the treatment of some diseases, most commonly diseases related to the digestive area. However according to Wikipedia and I quote verbatim; "Medicine (from the Latin medicine, derived in turn from mederi, which means 'cure', 'medicate') ..." would be the science that deals with the study of diseases with the intention of granting a cure in favor of the health to extend life. This basically means that a Medicinal food must, as a general rule, cure something and be the only treatment for a specific problem, be it a disease, ailment or any type of problem that entails a direct consequence of the unnatural deterioration of the body.

La raiz de Jengibre por otro lado si puede ser considerado medicinal debido a sus propiedades y beneficios especificos, siempre y cuando se utilice correctamente claro está. El jengibre posee propiedades desinflamatorias bastante efectivas, siento capaz de mejorar considerablemente por si solo enfermedades respiratorias como asma, tos o incluso bronquitis. Tambien y repito POR SI SOLO, es capaz de regular la presion arterial en personas con hipertension ya que tiene la peculiaridad de hacer la sangre mas "liquida" y asi favorecer la circulacion en general sin tener que utilizar algun farmaco.

Ginger root, on the other hand, can be considered medicinal due to its specific properties and benefits, as long as it is used correctly of course. Ginger has quite effective anti-inflammatory properties, I feel capable of improving considerably by itself respiratory diseases such as asthma, cough or even bronchitis. Also and I repeat BY ITSELF, it is capable of regulating blood pressure in people with hypertension since it has the peculiarity of making the blood more "liquid" and thus favoring circulation in general without having to use any drug.


NOTA IMPORTANTE / IMPORTANT NOTE

Si bien creo que los alimentos medicinales pueden ser muy beneficiosos para la salud y para el desarrollo general de la humanidad, considero tambien que la mayoria de las personas no poseemos los conocimientos necesarios para sustituir a los farmacos con productos naturales. Manejar las cantidades correctas de ingesta por dia, por mes y por individuo para cada enfermedad es importante, ya que a pesar de ser algo Natural, todo en exceso es malo y puede llevar a una intoxicacion, asi que por favor, documentece lo suficiente al respecto y tome las medidas adecuadas antes de querer llevar una vida completamente libre de farmacos. La nuez moscada por ejemplo tiene tambien propiedades muy beneficiosas, pero luego de cierta cantidad se vuelve un veneno.

Although I believe that medicinal foods can be very beneficial for health and for the general development of humanity, I also believe that most of us do not have the necessary knowledge to replace drugs with natural products. Managing the correct amounts of intake per day, per month and per individual for each disease is important, since despite being something Natural, everything in excess is bad and can lead to intoxication, so please, document enough when Respect and take appropriate action before you want to lead a completely drug-free life. Nutmeg for example also has very beneficial properties, but after a certain amount it becomes a poison.

Ahora, acabamos de ver muy por encima a dos grandes productos naturales, uno de ellos un Alimento fundamental en la dieta humana y otro un producto que puede ser utilizado como Medicina. Dicho eso, el jengibre en nuestro caso, NO puede ser considerado un alimento, debido que un alimento es toda aquella sustancia en nuestra dieta diaria con nutrientes necesarios para mantener las funciones vitales. Aqui claramente el arroz cumple con los requisitos, ya que nos ayuda a mantener nuestras funciones vitales (nos mantiene vivos) a pesar de no poseer propiedades medicinales, el jengibre vendria siendo todo lo contrario, nos otorga propiedades medicinales mas no es un alimento que podamos o debamos incluir como unico en nuestra dieta diaria, ya que se volveria perjudicial para nuestra salud a mediano y largo plazo.

Now, we have just seen two great natural products, one of them a fundamental Food in the human diet and the other a product that can be used as Medicine. That said, ginger in our case can NOT be considered a food, because a food is all that substance in our daily diet with nutrients necessary to maintain vital functions. Here clearly the rice meets the requirements, since it helps us maintain our vital functions (it keeps us alive) despite not having medicinal properties, ginger would be the opposite, it gives us medicinal properties but it is not a food that we can or we should include it as the only one in our daily diet, since it would become detrimental to our health in the medium and long term.

Dicho eso, ¿como se logra un alimento con propiedades medicinales?. Esta respuesta posee dos vertientes, una de ellas seria muy simple, constaria de mezclar en nuestro caso arroz y jengibre y crear una receta que se adecue a nuestras necesidades, de esta manera otorgandole a un Alimento (Arroz) propiedades medicinales (Del jengibre) y por matematica simple tendriamos un alimento medicinal. Dicho eso tambien existen alimentos medicinales en nuestra naturaleza, solo que requiere de un estudio mucho mas avanzado de nuestro antepasados para reconocerlos, es bien conocido que en comunidades primitivas existian cazadores y recolectores y que algunos podian vivir con una dieta proveniente solo de la recoleccion de frutas y vegetales, seria cuestion de investigar uno por uno todos estos productos e ir estudiando si poseen propiedades medicinales por si solos. Segun mi documentacion para este Post, las cerezas ayudan al acido urico, los arandanos combaten infecciones y enfermedades como diarreas por ejemplo.

That said, how do you get a food with medicinal properties? This answer has two aspects, one of them would be very simple, it would consist of mixing rice and ginger in our case and creating a recipe that suits our needs, in this way giving a Food (Rice) medicinal properties (Ginger) and by simple math we would have a medicinal food. That said, there are also medicinal foods in our nature, only that it requires a much more advanced study of our ancestors to recognize them, it is well known that in primitive communities there were hunters and gatherers and that some could live with a diet that came only from the collection of fruits and vegetables, it would be a question of investigating all these products one by one and studying if they have medicinal properties by themselves. According to my documentation for this Post, cherries help uric acid, blueberries fight infections and diseases such as diarrhea for example.

En resumen y para no hacer mas largo el Post, considero bastante interesante documentarse al respecto a la hora de compartir una receta en la comunidad, ya que esto en mi humilde opinion enriqueceria mas la comunidad en general y continuaria con lo que creo que fué el proposito por el cual se creó, Educar sobre Medicina Natural.

In summary, and in order not to make the Post longer, I consider it quite interesting to find out about it when sharing a recipe in the community, since this in my humble opinion would further enrich the community in general and continue with what I think was the Purpose for which it was created, Educate on Natural Medicine.

Enjoyed this post a lot! As a person of indian origin, we use a lot of ginger. Have you heard of lectins and GA's in many grains nowadays.

Lectins as I understand are like the protein substitute that vegans consume right? It is found in grains of the family of beans, abas, chickpeas, lentils... The other still i cannot understand what it is, the translator does not allow me to understand correctly what "GA's" means

Glycoalkaloids. It's actually interesting that we can classify foods that have substances that aren't always beneficial to humans whereas other foods are harmless. I guess some goods still taste amazing and they have slight amounts if poison. I really like your take on it from your perspective. Again excellent post.

Guao, esto sin duda alguna es importantísimo saberlo y, como mencionaste el mezclar arroz con jengibre, en el país en el cuál resido (Perú) preparan el arroz chaufa con bastante jengibre, al leer tu post me hizo recordar esa receta. La información que planteas aquí es excelente! Un abrazo. 💜

Me gusta mucho el arroz chaufa, aunque de chino tenga nada es bastante sabroso jaja. It is really important to understand what we are eating and I agree, there is a big difference between foods that are healthy for us and those that have medicinal qualities. The key is for those who chose to eat for medicinal reasons to research and learn as much as possible.

I think that research is the right thing to do in all aspects, I usually see a lot how they do not trust older people when they talk about medicinal plants for example and thinking about it carefully that grandmother will not know anything about organic chemistry, but she has cured her children since they were born with plants medicinals and knows they work.

And it also applies the other way around, when you try to explain to your grandparents that their miracle cure is just a myth, they scold you and look at you ugly haha
