Soto Medan For My All Family Member

Hello everyone,
This morning was really tiring, I planned to do my usual activities, but due to fatigue due to weight training on the legs, I had to take a short break, why is that? I almost fainted, unknowingly I didn't know that I lack energy for leg training today. I was picked up by my husband while at the gym and came home feeling disappointed. It turns out that a diabetic cannot do a lot of sports activities, but must slowly and be able to restrain myself so that something dangerous does not happen.

I'm low on energy because in a calorie deficit for almost a week, I'm trying to lose weight and gain muscle mass with gym exercises and cardio to speed things up. But, I miss leading with my own body. It's a bit heavy but these are my goals. While losing weight, I also have to increase muscle mass so that my body's metabolism can fight against the diabetes that I suffer from.

Because this was a little confusing, I finally decided to do maintenance calories so that I would be fit again, so that I could exercise properly without worrying about my body's condition, because building muscle mass requires good energy, especially in food. So, I decided not to make diet food, and also be able to satisfy all my family members at home.

So, I decided to make Soto Medan, because I had some chicken pieces that I kept as stock. My father in law was on a trip out of town, because he really doesn't like chicken, so I want to make my mother in law's favorite food that she rarely makes because it really goes against my father in law's preferences.

Soto Medan which will be very delicious this time, I made it with 100% love, because it's been a long time since I never eat Soto Medan, I think it's been 6 months since I last ate it in the hospital while in intensive care after a miscarriage.

Soto Medan is a type of food that is typical of the area where I live, namely in the form of chicken broth and shredded chicken meat topped with coconut milk, it tastes like a combination of many spices mixed together with some vegetables such as sprouts and carrots. Coupled with sliced leeks and celery then mixed with lime juice. Have you imagined what it's like?

Well, this time I made Soto Medan with pergedel, but for the pergedel recipe I will explain in the next recipe. Because making pergedel requires good concentration, so I can't write it in one post. But don't worry, I promise to post the recipe for you, I won't forget my promise!


Asparagus Soup
The Recipe


Prepare the ingredients;

  • 500 gr of chicken that has been cleaned
  • Puree seasoning; 5 shallots, 5 garlic cloves, 1 ginger segment, 1 turmeric segment, 1 lemongrass stalk, 2 candlenuts and 1 tsp coriander.
  • The seasoning to dipp; 2 leeks, 2 celery leaves, 2 lime leaves, 2 bay leaves, and 1 lime.
  • Salt, sugar and spices for soup

How to make Soto Medan;

  • Chicken and 2 liters of water are put into a large pot, cooked together until the chicken meat becomes very soft. Then after the chicken is tender, drain the chicken and the cooking water mixed with the ground spices.

  • The chicken that has been boiled is then fried again until the skin is slightly brown, after it has cooled, the chicken is shredded according to taste. Be careful because the chicken is very hot, use a fork if you can't use ur hands while scraping the chicken.

  • Chicken cooking water mixed with ground spices and spices that must be dipped in the above ingredients. Boil for 20 minutes, then add sugar, salt and soup spices.

  • Squeeze the grated coconut and get the coconut milk, then pour it into the pan. Then add lime juice at the end.

  • Sprout that has been cleaned then dipped in hot water, then let stand for 5 minutes and then strain.

  • In 1 bowl, pour the sprouts, shredded chicken and soto sauce. Soto Medan is ready to be served!

You can make it with asparagus, I tried it once when I didn't like chewing on meat.
