Shkembe chorba and sourdough bread - Hive Creative Contest

Hello @zord189 and Foodies! We are Poly and Dany. We love design, art, photography, eating and of course cooking.

I am gonna share a tradition Bulgarian soup called Shkembe chorba, accompanied by Sourdough bread, that I bake myself.

Something interesting about this soup is that in #Bulgaria it is the usual breakfast when one have hangover.
It let you feel better, warmer and have a productive day.

I will start with the soup.

We need:

  • 300-400g tripe (beef belly) or in Bulgarian Shkembe/Шкембе
  • 400-500ml cow milk
  • butter
  • onion
  • paprika, black pepper, salt
  • garlic
  • hot chili pepper
  • red wine vinegar

Steps

  1. Boil the tripe, till it is soft. Cut it in small squares. Keep the broth.
  2. Combine 1l of the broth with hot milk, salt and black pepper.
  3. Stir some onion in a pan with a little butter. Add some paprika and few tablespoons from the broth.
  4. Combine everything that you cooked so far and let it boil on low temperature for several minutes.
  5. You serve with Bread , hot chilly pepper and garlic soaked in red wine vinegar.

About the Sourdough bread

This is easy intuition based recipe. No strict quantities just feeling.

Step 1. Find sourdough
You can buy it or you can make it yourself - I can make tutorial on that some other time.

Step 2 Make sure it is active. Take about 50g sourdough. Mix with 50g flour and 50g of water. Let it stay in a warm room. It should at least double in several hours. If this happen you are ready to make bread.

Step 3
Take all your sourdough and mix it with cup or two water. Start adding flour till it feels right and you can manipulate it with your bare hands. Give the dough some tough love, beating and streching it for few minutes.

Let it stay half an hour and squish it some more.

Then let it stay till it double is size.

Step 4 Now knead it more carefully, try to make a ball if it and put in in a cup covered with piece of cloth well covered in flour.

let it stay overnight (6-12 hours) in the fridge

Step 5 Carefully transfer it in a hot casserole, preferably cast iron. And put it in preheated on 250 degrees oven. Add a cup with water in the oven and put fan on.

Bake 15-20 min, then turn off the fan and lower temperature to 180-200 degrees. Bake till it make nice dark color.

Experiment, fail, learn repeat till satisfied!
