5 cucharadas de maizena
1 ½ taza de agua
1 taza de azúcar
3 yemas
Ingredientes para la base del pie:
150 gr de mantequilla
1 ¾ de harina todo uso
Ingredientes para el merengue:
3 claras de huevo
3/4 taza de azúcar

Paso 1
En una licuadora colocamos las yemas, el azúcar, la maizena, el jugo de limón y el agua. Licuamos.
Step 1
In a blender we put the yolks, sugar, cornstarch, lemon juice and water. We liquefy.
Paso 2
Colocamos la mezcla en una olla, y la llevamos a fuego medio hasta que espese. Retiramos del fuego y cubrimos con papel film. Una vez, que baje la temperatura, la llevamos a la nevera hasta que esté bien fría.

We place the mixture in a pot, and we bring it to medium heat until it thickens. Remove from heat and cover with plastic wrap. Once the temperature drops, we take it to the fridge until it is very cold.
Paso 3
Llevamos la mantequilla al refrigerador hasta que esté bien fría. Luego en un envase, integramos la mantequilla con la harina, usando las yemas de los dedos, hasta obtener una masa uniforme.

We take the butter to the refrigerator until it is very cold. Then in a container, we integrate the butter with the flour, using the fingertips, until we obtain a uniform dough.
Paso 4
Cubrimos con la masa los moldes para pie, y la pinchamos con un tenedor. Llevamos al refrigerador por 20 minutos. Transcurrido este tiempo, horneamos a 170 C por 20 minutos, aproximadamente. Una vez, que esté lista la base la dejamos enfriar.

Paso 5
En un envase colocamos las claras de huevo y batimos con batidora eléctrica a punto de nieve, agregando progresivamente el azúcar.

Tomamos la base de pie, rellenamos con la crema de limón, y con ayuda de una manga pastelera cubrimos con merengue. Llevamos al horno por 5 minutos para dorar el merengue. Decoramos

Este postre es un clásico al que no podemos resistirnos. Me encanta que hayas preparado la base directamente con harina en sustitución de la clásica pasta a base de galletas. De verdad se ven muy buenos esos mini pie.
