Prepared Vegetarian Biryani after a long time

So today we had a holiday for Ramzan, so Happy Eid Guys and Gals. So I thought of preparing Biryani for today, and that too Vegetarian. Whenever I had to eat Biryani, I used to order but today I thought of preparing myself again to see if I can cook it well or not.

This is the Final Outcome, I know it's not a good looking but trust me the taste was quite good.

So to start I have cut the vegetables like Onion, Capsicum, Carrot, Potato, Ginger, Chili and kept Cashew, Cinnamon, Garlic and Cardamom aside on a plate as shown below.

I have also cooked rice in a bowl to the 75%, which means it is not fully cooked, this is because I do not want the rice grain to be overcooked, we want the grains should be as a whole. While boiling, I have put Cinnamon, Cardamom and clove along with some salt so that we get the aroma of the spices. this is actually needed when we are eating it because we want that aroma should be coming out from each and every grain of the rice.

Then I have made a puree of Tomato, Ginger, Chili and garlic, which will be used to actually create the Biryani layer.

After that I have deep fried the vegetables, like Potato, Onion and others.

Then in a pan I have added the tomato puree along with the curd to make a Biryani base and along with that I have added spices like Biryani Powder and others along with salt and Kashmiri red chili to make it little red.

Along with that I have added some of the deep fried vegetables inside the puree to soak some of the spices in it.

Once the puree is ready, we will add a layer of rice above it.

After that, I will be adding one more layer of puree.

And then I will be adding some of the fried veggies over it.

And at teh last one more layer of rice and add all the veggies above it.

I will then cook it again for 10 minutes and then mix it well as the Biryani is ready to be served.

The taste of the Biryani was really good. I think I was missing paneer and cauliflower other than that it has all the spices and veggies. Though it was not bad at all and I can say that it was as good as any Biryani, even though it was vegetarian.

Try jackfruit biryani next time you want to cook biryani with no meat!

cool, will try that...though as a vegeterian we do not wawant it to look like meat...

i guess then its best to stick with paneer or just veggies.
