Cold Beetroot Soup History

A dish that brought together both aristocracy and those who were poor.

A cuisine that has always brought people together has been cold beetroot soup. On the king's table and in the homes of the poorest people, soup was there. Since every self-respecting Lithuanian understands how to combine them delectably and may even have his own secret ingredients, it appears that the appeal of cold beetroot soup has persisted to the present. We invite you to learn more about the soup's long history, which is just as astounding as its flavor.

One of the oldest soups

Only in the 18th century did the first soup recipes start to appear in the sources. late 19th century - the start However, Lithuanians simply did not have the custom of recording recipes in the past. However, that doesn't imply that cold beetroot soup wasn't eaten before.

The majority of the records from the previous years dealt with accounting and accounts. These still-existing inscriptions imply that beetroot was once used as a food ingredient.

We have very old recipes for borscht and its cold variations that date from the 18th and 19th centuries and almost exactly match one another. The early recipes let us see what the soup was like, and it becomes obvious from them that cold soup was actually edible.

Cold beetroot soup back then had a slightly different flavor than it does now. In general, this word was not used in ancient times. The word "cold" was probably first used by Ludvika Didžulienė in the 19th century. late-20th century when he started writing gastronomy books in Lithuanian.

The first mentions of Cold Beetroot Soup

In 1825 The Gunters had the honor of visiting the palace of Izabela Fleming, the widow of the most powerful ATR nobleman, Duke Adam Kazimierus Czartoriskis, in Pulavai. The broad-minded duchess called almost the entire "ring" of the ATR aristocracy and planned a "people's picnic" in the English Pulava Park: each family had to bring a traditional dish from their region. The Gunters brought cold beetroot soup, joking that they had just returned from a trip and had not yet managed to start a fire.

When nowadays we are often mistaken as to which dishes belong to our Lithuanian cuisine and which belong to our neighbors, we can be sure of one thing - Cold Beetroot Soup is definitely Lithuanian soup.
