Una Bruja en la Cocina: "Mini Pizzas with Oatmeal and Chia Tortilla Base." [EN] // [ES]

in Foodies Bee Hivelast year
Who doesn't like to go off the diet from time to time, Sundays are the most provocative days to do it, because we are usually at home and there is not much we want to do, however, when it comes to health it is best to keep that diet without many alterations, but nobody said we can't make some delicious changes to the diet to make it more fun. Who doesn't like a good pizza on Sunday? I really love them, and my little Mathias has become a pizza lover just like me, so, to take him a little on the path of healthy eating, we are integrating him little by little to the diet of the biggest of the house, and for that it is necessary to make the meals fun, so that he prefers to eat that to eat something else, and this time I've done it. I wanted to transform some oatmeal tortillas, which would probably be boring for him with anything else, but transforming them into mini pizzas, he simply loves them and asked for more.

The basic recipe that I am going to share with you today are oatmeal tortillas, which can easily be used to make sandwiches, chicken or vegetable wraps, ham and cheese rolls, or these delicious mini pizzas that are ready in 5 minutes in the air fryer. These tortillas are made in no time, they do not require a lot of work or great culinary skills, so you can say that someone without experience in the kitchen can prepare them without much trouble, what I do advise you to have is a non-stick pan or at least well cured, basically you only need two ingredients for the preparation of the tortillas, but you can add some other little things to taste, such as chia seeds (as in my case), sesame seeds or even a touch of flaxseed meal.

They are easy to make, they are really fast, so you can make a batch and keep them in the fridge for when you want to use them, and best of all, they are really delicious and best of all, healthy; join me and I'll show you how to prepare these mini pizzas with oatmeal and chia tortilla base.

Ingredients

2 Cups Oat flakes
2 tsp Chia seeds
1/2 tsp Salt
1 Envelope Splenda / Sweetener to taste
2 Cups Water
C/N Pizza sauce
Cooked leg ham
Mozzarella cheese
Preparation time 15 Minutes
Cooking Time 10 Minutes

To begin, mix the oat flakes with the chia seeds, salt and the sachet of splenda or the sweetener of your choice, and add the water, mix to integrate well and let stand for at least 10 minutes.

Once the time has passed, we will get a kind of oatmeal paste with chia, this means that the mixture is ready to cook, in a very hot pan add a couple of tablespoons of this mixture and spread the mixture as thin as possible, letting it cook for about 3 or 4 minutes over medium low heat, when turning it over we do a little more pressure to try to make the tortilla even thinner, and let it cook for another three minutes more, turn again and cook another minute and our tortilla is ready.

Once the tortillas are ready we proceed to make the mini pizzas, for this we add a couple of tablespoons of pizza sauce and add ham and mozzarella cheese to taste, you can add vegetables or whatever you want, in my case it was what I wanted, we take to the air fryer for 5 minutes at 200 ° C and just to brown the cheese and finish toasting a little below the tortilla and ready our mini pizzas of oatmeal and chia dough.

First of all, I must say that I found the tortillas delicious by themselves, with the addition of the sauce, ham and cheese was a home run, and my biggest fear was the acceptance of Mathias, and as soon as he tasted it he asked me if there was more of that to eat later hahaha, so these oatmeal tortillas turned into pizza were a resounding success. On the part of my parents they combined them with vegetables and were in love with them, the negative point is, in my opinion, that the yield of the mixture is not as much as I expected, of these quantities barely came out 8 tortillas, so for the next one, which will probably be tomorrow I will use double the quantities to be able to satisfy my battalion.
