Una Bruja en la Cocina: "Paprika Mayonnaise" [EN] // [ES]

My father is one of those who always craves to ask me for something at the last minute when I am preparing food, this time he didn't ask me at the last minute and he was lucky that I prepared it for him hahaha, he asked me to make him a paprika mayonnaise, instead of a guasacaca to accompany the chicken and the parboiled yucca for lunch, I could not refuse, because he prepares breakfast and the truth is that it is not difficult to prepare, basically it is a classic mayonnaise with the addition of roasted paprika, which so to speak, is the most difficult part and that takes us some time to get ready. Roasted paprika is really delicious to prepare sauces to accompany meats and vegetables, and we can prepare it directly on the stove, on charcoal, in the oven and in the easiest and quickest way in the air fryer.



When we roast the paprika it intensifies its flavor, besides its texture changes completely, the truth is that I love the aroma and flavor of roasted paprika, and this mayonnaise besides being very simple will infuse delicious flavors to our meals, it is ideal for a good sandwich and even for a good hamburger because roasted paprika goes very well with beef, pork or chicken. Even for a good empanada it is the perfect sauce, without many complications and without strange ingredients. The truth is that if it had not been for this mayonnaise, probably my chicken today would have been a little sad hahaha, no lie the chicken was great too!



If you have ever made a mayonnaise, surely you can make this one, because it is the same principle of preparation, I am not particularly a fan of the mayonnaise that we buy in the supermarket, however, I have learned to prepare it to my taste and the truth is that I love it this way. Join me and I will show you how to prepare this delicious paprika mayonnaise.

Ingredientes

1 Large ripe paprika
1 Egg
2 Tbsp Vinegar
50ml Olive oil
200 ml Mug Canola oil
1 tsp Salt
1/4 tsp Ground black pepper




Preparation

Preparation time 5 Minutes
Cooking Time 30 Minutes






To begin we must roast the paprika, for this wash and dry it very well and take it to the air fryer at 200 °C for about 25 to 30 minutes, in the oven it should be baked at 220 °C for about 40 minutes, roast it directly in the fire is much faster, however, the skin is usually burned a lot and it is not always delicious that flavor in the paprika, besides that removing the skin is more difficult. Once the baking time is over, we will notice that its skin is wrinkled, still hot we place it in a container with an airtight lid and cover it until it cools down. When it has cooled or is already at a temperature that we can manipulate its size will have reduced considerably.











Once cold, remove the skin and seeds, cut into large pieces and add to the blender, add the egg and vinegar.











We continue adding salt and pepper and the canola and olive oils, I like to use this combination of oils because they are theoretically healthier, and always olive oil in smaller quantities because its flavor is quite strong and not everyone likes it. If you are going to process it with a mixer or hand blender, add the oil all at once, on the contrary, if you are going to use a stand blender, you should add the oil in a trickle while blending. We will blend until we obtain the desired texture and then we pack it to keep it in the refrigerator until the moment of use.











This mayonnaise can last for a week in refrigeration, and as I already mentioned, it is ideal to spread on a good toast, for sandwiches and hamburgers or to bathe grilled meats, its flavor is the perfect complement for them, a good fresh salad goes very well to balance the flavors and enjoy.

Mi padre es de los que siempre se antoja de pedirme algo a última hora cuando estoy preparando la comida, esta vez no me la hizo a último momento y tuvo la suerte de que se lo preparara jajaja, me pidió que le hiciera una mayonesa de pimentón, en lugar de una guasacaca para acompañar el pollo y la yuca sancochada del almuerzo, no pude negarme, pues el preparo el desayuno y la verdad es que no es nada difícil de preparar, básicamente es una mayonesa clásica con la adición del pimentón asado, que por decirlo así, es la parte más difícil y que nos lleva algo de tiempo tener listo. El pimentón asado es realmente delicioso para preparar salsas que acompañen las carnes y vegetales, y lo podemos preparar directamente en la estufa, al carbón, en el horno y de la manera más fácil y rápida en la freidora de aire.



Cuando asamos el pimentón este intensifica su sabor, además de que su textura cambia por completo, la verdad es que amo el aroma y el sabor del pimentón asado, y esta mayonesa además de ser muy sencilla les infundirá sabores deliciosos a nuestras comidas, es ideal para un buen sándwich e incluso para una buena hamburguesa pues el pimentón asado le va muy bien a las carnes bien sea de res, cerdo o pollo. Incluso para una buena empanada es la salsa perfecta, sin muchas complicaciones y sin ingredientes extraños. La verdad es que de no haber sido por esta mayonesa, probablemente mi pollo de hoy habría quedado un tanto triste jajaja, ¡Nah mentira el pollo me quedo buenísimo también!



Si has realizado alguna vez una mayonesa, seguramente podrás hacer esta, pues es el mismo principio de preparación, particularmente no soy muy fanática de la mayonesa que compramos en el supermercado, sin embargo, he aprendido a prepararla a mi gusto y la verdad es que de esta manera me encanta. Acompáñame y te muestro como prepare esta deliciosa mayonesa de pimentón.

Ingredientes

1 Pimentón maduro grande
1 Huevo
2 Cdas Vinagre
50 ml Aceite de oliva
200 ml Taza Aceite de canola
1 Cdta Sal
1/4 Cdta Pimienta negra molida




Preparación

Tiempo de preparación 5 Minutos
Tiempo de Cocción 30 Minutos






Para comenzar hay que asar el pimentón, para esto lo lave y seque muy bien y lleve a la freidora de aire a 200 °C por unos 25 a 30 minutos, en horno se debe hornear a 220 °C por unos 40 minutos, asarlo directo en el fuego es mucho más rápido, sin embargo, suele quemarse mucho la piel y no siempre es delicioso ese sabor en el pimentón, además de que retirarle la piel es más difícil. Una vez terminado el tiempo de horneado, notaremos que su piel esta arrugada, aun caliente lo colocamos en un envase con tapa hermética y tapamos hasta que enfrié. Cuando haya enfriado o ya este a una temperatura que podamos manipular su tamaño habrá reducido considerablemente.











Ya frio retiramos la piel y las semillas, cortamos en trozos grandes y agregamos en el vaso de la licuadora, añadimos el huevo y el vinagre.











Continuamos agregando sal y pimienta y los aceites de canola y de oliva, me gusta utilizar esta combinación de aceites pues son en teoría más saludables, y siempre aceite de oliva en menor cantidad pues su sabor es bastante fuerte y no le agrada a todos. Si se va a procesar con mixer o licuadora de mano agregamos el aceite de una vez, si por el contrario utilizaremos licuadora de base, debemos agregar el aceite en forma de hilo mientras se va licuando. Batiremos hasta obtener la textura deseada y luego envasamos para guardar en el refrigerador hasta el momento de utilizar.











Esta mayonesa nos puede durar una semana en refrigeración, y como ya lo mencione, es ideal para untar en una buena tostada, para sándwiches y hamburguesas o para bañar las carnes asadas, su sabor es el complemento perfecto para ellas, una buena ensalada fresca le va muy bien para equilibrar los sabores y a disfrutar.
