Step by step preparation of Local Ofada sauce (Ayamase Sauce) eaten with white rice.

Good morning everyone,

This morning I decided to try out something new. I decided to make a sauce I have never made before and the sauce is called Ayamase sauce. It is also called Ofada sauce because it is normally eaten with Ofada rice(a special type of local rice).

Since I've not made it before (but I've eaten it before and I know its very tasty), I had to watch YouTube videos on its preparations. Unfortunately I didn't have the type of pepper (green bell pepper) that's normally used in its preparation. Fortunately I saw another tutorial where they used the available pepper(red bell pepper) I have. With that tutorial, I decided to proceed.

INGREDIENTS USED FOR THE SAUCE PREPARATION.

  • Red bell peppers
  • Onions
  • Palm oil
  • Beef
  • Cow skin
  • Dried fish
  • Locust beans
  • Crayfish

PROCESS

  • First I blend the pepper and onions together lightly i.e. not fully grinded and I pours inside a sieve to remove its water.

  • I pour palm oil inside a clean pot, cover it and allow it to blanch for like two minutes. After that, I took it outside to open and cool down. Them I pour inside a different bowl.

  • I pour the pepper inside an empty pot then I pour the oil inside.

  • Inside a different pot I fried diced onions and crayfish then I pour it inside the pepper.

  • The next ingredients I added was locust beans.

** After that I added Maggi and Salt to taste.

  • Then I added boiled meat and diced boiled meat and cow skin with washed dried fish. Then I added little meat broth to ease the sauce thickness.

  • After adding all the ingredients, I stirred them all together, covered the pot with its lid and allowed it to cook together for few minutes.

  • Once the sauce was ready, I boiled rice which I served with the Ayamase sauce.

  • My little brothers loved it so much that they kept asking for more.
