The Best Chocolate Cake... Ever?

Yesterday was my partner's birthday! 🥳🎉✨ So, naturally I decided yesterday was also Cake Making Day.

Unfortunately I'm still mildly limited in my collection of bakeware utensils -- An Unprepared Cook's Apple Cake, for example -- so I couldn't make a proper shaped cake of circular glory, however nothing wrong with a rectangle I guess. 😄

After asking him what cake he'd like, and after he declared very explicitly that chocolate cake was the only cake for him, I scoured the internet for the best chocolate cake recipes and found an odd one that declared itself to be the best chocolate cake ever and stated that boiling hot water was the secret to an indulgent, moist cake.

Boiling hot water!?

I was curious and decided to make a similar version of the aforementioned cake.

⭐️Dry Ingredients✨

1 cup self-raising flour
1 cup white sugar
1/2 cup cocoa powder
1 teaspoon espresso powder
pinch of salt


✨Wet Ingredients⭐️

2 regular sized eggs
1 teaspoon vanilla essence
1/2 cup milk
1/4 cup oil
1/2 cup BOILING HOT WATER!!

I'm not very fancy when it comes to cake mixes and recipes. You will see recipes out there saying, "whisk the egg yolks and sugar, slowly add the egg whites, fold this, fold that" ... I'm not like that.

I make cakes and cookies and whatnot -a lot- and I am never, ever fancy about it. They always taste good. Thus I don't see the point in partaking in extravagant mixage.
 

⭐️ Please see my very simple method:

Preheat oven. 175 degrees Celsius.

Chuck all dry ingredients into a mixing bowl. Combine well.

Add all wet ingredients except the magical Boiling Water. Mix with an electric whisker for a minute.

Slowly add the magical Boiling Water, slowly because you don't want it spattering everywhere, mixing on a slow speed, because you still don't want it spattering everywhere.

Pour the lot into prepared cake tin, ceramic baking dish, alfoil lazy-person's baking dish, whatever floats your boat.

Pop it in the oven. Wait 28 minutes.

Poke it in the centre with a toothpick to make sure it's cooked properly.

Voila.

And then!

We wait. And wait and wait and wait. And wait some more for the cake to cool. I'm sure most people have fancy things like cooling racks and whatnot, but I don't. So I have to wait longer than most people for the thing to cool.

While waiting for the cake to cool, you can prepare some whipped cream and some chocolate frosting. Or some custard. Or something.

I'm choosing to make some whipped cream, and some chocolate frosting! Was tempted to make some salted caramel to drizzle over the top, but frankly, I was too lazy.

Whipped cream is easy. Some thickened cream and sugar to taste, then whip it until it forms peaks!

The chocolate frosting I've chosen to make is as follows:

✨Chocolate Frosting⭐️

1/2 cup butter
1/2 cup cocoa powder
2 cups icing sugar
3/4 cup thickened cream
1 teaspoon vanilla essence

And simply mix it all together until it's a good consistency, then slather it onto the cake! As I said, I'm not very fancy; adds more of a "homely" touch, haha.

🎂 Ta-da! ✨

And the verdict?

Wouldn't say that it's the "best chocolate cake ever" as per the original recipe I made variations from, and it wasn't as moist as I expected from the raving reviews of the magical ingredient Boiling Water, but it was still yummy and with the espresso clearly coming through I'd personally call it more of a Mocha Cake, or Chocoffee Cake, rather than Chocolate.

But the most important thing?

The birthday boy loved it. 😊❤️
