[ESP] | [ENG] — Desayuno Súper Saludable: Arepas de Calabacín y Zanahoria || Super Healthy Breakfast: Zucchini and Carrot Arepas.

Hello, Food Lovers!

This time I have returned to this community to share with you a different way to prepare the typical Venezuelan arepas, I do not consider this post a recipe, rather I see it as an idea to give a different touch to a food that is common, well common for me and for many other Venezuelans, because the truth is that for us Venezuelans including arepas in our breakfasts is something very normal and preparing the dough to make them is something that is not complicated at all, the thing is that I always like to add extra ingredients to the dough to make the arepas a much more complete and nutritious food, as I did with the spinach or beet arepas.

So the extra ingredients this time are: zucchini and carrots. I promise this post will be quite brief so without further ado, let's get started!

INGREDIENTES

INGREDIENTS

The amounts of the ingredients I share here are the equivalent to prepare two small arepas, for one person.

✔ 2 tablespoons oat flakes.

✔ 5 tablespoons oat bran (bran bran).

✔ 4 tablespoons precooked cornmeal.

✔ One-fourth of a small grated carrot.

✔ One-fourth of a small grated zucchini.

✔ 1 pinch of salt.

✔ ½ cup of water

PROCEDIMIENTO

PROCEDURE

The first step is to grate the zucchini and carrot through the thinnest part of the kitchen grater. I recommend that you squeeze the zucchini a little to avoid excess liquid.

Then, mix the solid ingredients with the carrot and zucchini and add water as you knead until you get a smooth dough that does not stick to your hands.

We will take portions of the dough, form small balls and flatten them. I like my arepas to be quite thin and small, and not to have too much dough inside, but these things are up to each person. Then, place them on a griddle until golden brown on both sides. A long time ago, when I was just a little girl, my grandmother taught me a little secret to know if the arepas are ready: If it sounds like a kind of drum it is because they are completely cooked, do you also do that?

On this occasion I accompanied my arepas with a third of avocado, a slice of mozzarella cheese and a scrambled egg with tomato, onion and spinach 🥰.

Well friends, this is what these whole wheat zucchini and carrot arepas look like. As with many other things I prepare, I always like to give a special touch to the arepas and if I can add an extra touch of nutrients, such as fiber for example.

And of course, to accompany these arepas I had to have coffee. This time I drank it black and unsweetened, I am getting used to drinking coffee without adding any kind of sweetener, the truth is that I do like that strong flavor.

Anyway friends, that's all for today. I hope you enjoyed this recipe and that you put it into practice.
