Today's menu had veggie pasta for our main course!
A creamy sauce made with zucchini, carrot, tomatoes and feta cheese...
I washed and grated my vegetables, then sautéed them with a finely chopped onion in some olive oil, added some salt, pepper, curry, dill, mustard and paprika and mixed well. Then, I added the grated tomatoes, 5 tablespoons of tomato sauce and two cups of water and let the sauce cook. ten minutes before it was ready, I added the pasta and some more water and let them cook in the sauce. Two minutes before removing from the fire, I added the feta cheese that once melted it gave a nice creamy texture to the dish.
My lunch was ready in less than half an hour!
