Rica sopa de lagarto/ Rich lizard soup

Hoy quiero compartir una receta de una rica sopa de lagarto, que prepararé y que en muchas ocasiones he compartido con mis seres queridos. Me gusta la sopa, trato de hacerla una vez por semana con diferentes ingredientes, mi madre me acostumbró a tomar sopa desde pequeña, ella decía que era importante para el organismo, consumir ese caldo el cual ayudaba a tener una buena digestión, el mismo iba acompañado de diferentes verduras que aportan nutrientes a nuestro organismo. Recuerdo la primera vez que hice una sopa, conté con la ayuda de mi madre, ella tenía paciencia para enseñar y no es fácil que la comida te quede bien en la primera realización, tuve la suerte de heredar un poco de la sazón de mis dos madres y le agregue mi toque personal, en ocasiones no me quedaron bien lo preparado; pero no fue motivo para seguir aprendiendo y mejorar las técnicas que necesitaba.

Today I want to share a recipe for a delicious lizard soup that I will prepare and that I have shared with my loved ones on many occasions. I like soup, I try to make it once a week with different ingredients, my mother accustomed me to eat soup since I was a child, she said it was important for the body, to consume that broth which helped to have a good digestion, it was accompanied by different vegetables that provide nutrients to our body. I remember the first time I made a soup, I had the help of my mother, she had patience to teach and it is not easy to get the food right the first time, I was lucky to inherit a little of the seasoning of my two mothers and I added my personal touch, sometimes I did not get it right, but it was not a reason to continue learning and improving the techniques I needed.



Preparación-Preparation

Para preparar la sopa necesitamos una buena carne de lagarto, jojotos, verduras (auyama, yuca, apio, chaco, ocumo), plátano, vegetales ají, pimentón, cebolla); ramas (perejil, cilantro, cebollín), orégano seco, ajo y laurel.

To prepare the soup we need a good lizard meat, jojotos, vegetables (auyama, yucca, celery, chaco, ocumo), plantain, vegetables (chili, paprika, onion); branches (parsley, cilantro, chives), dried oregano, garlic and bay leaf.



Para empezar nuestra preparación lavamos bien la carne; luego la picamos, se coloca en una olla con un poco de agua agregamos los vegetales y los jojotos, tapamos y esperamos que se afloje la carne.


To begin our preparation we wash the meat well; then we mince it, place it in a pot with a little water, add the vegetables and the beans, cover and wait for the meat to loosen.




Cuando estamos seguro que esta floja la carne, colocamos las verduras y agregamos un poco más de agua, volvemos a tapar hasta que este cocida.

When we are sure that the meat is loose, add the vegetables and add a little more water, cover again until it is cooked.




Antes de apagar colocamos las ramas y plátano pintón picados en pequeñas porciones.

Before turning off, place the branches and plantains chopped in small portions.




Una vez lista nuestra sopa de lagarto nos preparamos a servir, podemos acompañarla con casabe y porciones de aguacate, no se imagina como disfruto preparar este plato que me recuerda tantos momentos felices, a mi madre le encantaba esta sopa, así cada vez que la preparo me imagino que está aquí compartiendo este momento que sin duda son importantes en nuestras vidas. Espero se animen y la preparen con su familia en cualquier momento de la semana

Once our lizard soup is ready we prepare to serve, we can accompany it with cassava and avocado portions, you can not imagine how I enjoy preparing this dish that reminds me of so many happy moments, my mother loved this soup, so every time I prepare it I imagine that she is here sharing this moment that undoubtedly are important in our lives. I hope you are encouraged to prepare it with your family at any time of the week.

This soup would be interesting to taste as I've never had lizard meat before, neither have I used plantain for a dish. However, the beauty of the world cuisine is that you can have a great variety of dishes you've never tasted before. It looks great by the way.

lizard meat is a risky dish I also drew attention to this. i have tried snake meat it is very similar to chicken but the lizard has not been tried
