You got my undivided attention at the mention of blackberries and wine! One can see you put a lot of work and love went into making your delightfully delicious libations. I enjoyed your detailed information and excellent photos/collage!

Interested in any elderberry wine recipes (or even raspberry, though that's more of Chambord liquor) you might have in the future that use less sugar to have a more tart taste. Please tag me if you post 😊

Thank you, @ninahaskin. In my winemaking, I find elderberries have a taste similar to port. Rosehip wine is good if you prefer a tart taste. These blackberries have a good balance: tart but not too sweet. If the yeast is good, you'll be amazed that those sugars will mostly be gone and turned to alcohol.
