Today we are once again at the first of the month, for some it will be Summer but for me it is now officially winter and although gold weather might hamper some. June is a very special month for me as it means Salami season! This is Christmas to me and I can not wait to mince a heap of pork mince hang it in my garage and watch it cure.

The annual tradition has been occurring longer than I have been alive for and it is probably the event I look forward to most in my life. Only the coldest month of the year can you do it in or risk botulism.
