Sweet potato curry with zucchini and pea

Sometimes all we need is a little warmth in our hearts. As you can see from my last post, I have been looking for some comfort foods to face some of life's challenges. With the diagnosis of endometriosis, I was kind of "forced" to get back into the kitchen. Since an anti-inflammatory diet is one of the resources to control the disease and prevent it from progressing, I ended up going back to the pots and the stove.

Cooking, for me, has always been a synonym for pleasure. But restricting some ingredients such as gluten, sugar, and many others, takes creativity, spices, and a little bit of disposition to create those dishes that really bring calm and coziness.

I made this sweet potato curry with zucchini and peas which was delicious and super comforting! If you're in need of a hug, I highly recommend making this recipe!

Let's go to the kitchen. Shall we?

Ingredients (2 people)

To make this curry you will need only simple ingredients that you can find anywhere. Together, they make super tasty dish that will warm your heart

3 medium-sized sweet potatoes
1 cup of peas (canned)
1 medium zucchini
1 onion
1 clove of garlic
1 tomato (optional - I ended up removing the tomato from the recipe and thought it was too tasty without, but you can add it if you want)
1 tablespoon of curry
olive oil
parsley

Directions

To prepare this delicious curry, you won't need much time! Here's step-by-step!

Step 1

Start by cutting the sweet potato into medium cubes and soaking it in water for at least 1 hour. This helps to remove the anti-nutrients from the tuber.

Step 2

Next, chop the garlic, the onion, the zucchini, and the tomato, if you want to include them in the recipe.

Step 3

In a pan, saute the onion and garlic in olive oil. Then, drain the potatoes, rinse them one more time, and put them in the pan to saute.

Add the curry so that the potatoes can cook in this flavorful broth. Add a cup of water without completely covering the potatoes.

Step 4

When the potatoes are well cooked, add the zucchini.

Only when the potatoes and the zucchini are soft, add the peas and cook for another five minutes. Taste the salt and add more if necessary.

That's it! This amazing, super-flavorful, and tasty curry is ready! To serve, add parsley to taste and a dash of olive oil if you like.

This recipe is very simple to make, with very affordable ingredients! Another advantage is that this curry is super fragrant and just by smelling it around the house, you get the feeling of a nice hug!

It's a delicious looking curry there, might have to try making it myself! It's interesting about the sweet potato anti-nutrients, I wasn't aware that was an issue, nor was I aware that certain foods could cause inflammation unrelated to allergic reactions. Though my assumption they're separate might not be true?

I'm curious, is it that certain foods are inflammatory across the board, or that individual people react to particular things which others don't?

Hi, @ndk.focus! Thanks for your comment! :) So, sweet potatoes have some phytates, impairing iron absorption and other nutrients. You should soak them in water for some hours before cooking or consuming them. Also, phytates cause gas heheheh. So, if you don't wanna because famous because of farting maybe you should do it! heheheh Endometriosis is also an inflammatory disease, so the way you eat is basically as you can control it. I don't have any allergy, I just changed my diet because of endo.

Helga often people mistake comfort food as things you can just take off the shelf and eat. This post would certainly be an eye opener for them.
It is very important to be healthy and good health comes from good food.
Nothing beats good homemade comfort food so why not spread the word about this ?
