A delicious and nutritious salad made from fresh snake gourd vegetables grown in the garden.

Hi my fellow Vegan food lovers,

What's up guys? Greetings from Sri Lanka. Today I got officially leave from my company's management for participate my daughter's parents meeting. Morning time we held parents meeting and then came to the house. These days I try more to cook vegetables because they have more nutritional value. It is best to eat vegetables grown in your own garden. Eating vegetables raw or half-boiled provides more nutritional value. Snake gourd can be called as a great herb in Ayurvedic medicine as well as indigenous medicine since ancient times as well as today. It can be seen that most of us today prioritize the appearance of vegetables over the quality. Because of this, many types of vegetables that have been used since the past are rarely eaten today. Snake gourd has become a vegetable that is not eaten by the younger generation.

My parents have worked hard to grow various vegetables in our garden using compost. The snake gourd that had grown there recently yielded two long pods, so one was for our food and the other one was given to my brother by my mother. Snake gourd can be prepared raw as a curry as well as a salad. Snake gourd has one quality when cooked and another quality when eaten raw. Because it contains more water, Snake gourd can be called a useful vegetable to protect the body from dehydration, reduce the temperature in the body and cool the body. So what I chose to prepare is a snake gourd salad. This salad can be prepared in a very short time.

Ingredients

  • 250 grams of snake gourd

  • Chopped tomatoes
  • Chopped onions
  • chopped green chilies
  • Salt as needed
  • A teaspoon of pepper powder
  • A little grated coconut
  • Juice of half a lime

Preparing steps

  • Wash the snake gourd well and scrape off the skin on the pod with a knife. It should be scraped until the green color appears.

  • Then cut the snake gourd into two and remove the white pulp in the middle with a spoon.

  • Cut the halved snake gourd into small pieces with a knife and set aside.

  • Take a small dish and put the snake gourd pieces cut into small pieces in it. Add chopped onions, finely chopped green chillies and chopped tomatoes to it.

  • Now add salt and pepper powder as needed. Add lime juice after that.

  • Take a big spoon and mix everything well.

  • Then add grated coconut to the mixture and mix very well.

This was a very tasty salad as it was prepared raw. Actually, no matter how many properties we give to the body, we usually have to buy it in the market, because we use excessive insecticides in our country's crops for commercial purposes, these vegetables like the tongue herb naturally become poison. So it is important to take up gardening for the health of your family members.

No. This isn't bitter taste. With adding pepper powder and green chilies pieces, it has nice taste.
