Homemade Vegan Bigos - My First Polish Dish

Hello V-Gang!,

This week I am back in the kitchen preparing a tasty vegan lunch. My wife had some errands to run so she let me loose in the kitchen as long as I cleaned up afterward.

Today I decided to make the Polish dish called Bigos, but the vegan version with mashed potatoes. I did want to also add some leftover broccoli and mushrooms but my wife said that was sacrilege and cannot be done to this dish.

This is my first time ever making this, so wish me luck!

The ingredients you need are:

  • 1,5Kg Potatoes
  • 2 Carrots
  • 1 White Onion
  • 1/2 White Cabbage
  • 1 Tin of Chopped Tomatoes

After gathering the ingredients, I got a deep pan and added some oil to it.

I then cut the cabbage ready with a huge knife.

As you get closer to the stork, be sure to cut around it. You don't want to add that to the dish.

Next I prepared the onion and began chopping it for the pan.

After chopping, it was time to enter it in the pan and then move on to the carrots.

The carrots are peeled and then grated directly into the pan.

You can then turn the heat up and start cooking the onion and carrot for a few minutes until the onion loses its translucent colour.

It is then time to add the water ready for the cabbage. You need to add plenty of water, but not too much, you can always add more if not enough, but harder to do the other way around.

In the cabbage goes, it looks huge right now but will shrink once it simmers for a while.

I then added three allspice balls. These will give some great flavor to the dish.

I then turned the cabbage over and mixed it while it simmered.

I added plenty of vegeta and garlic poweder for flavoring. This is going to taste awesome!!!

Mix everything in and add some water if needed.

I put some water on to boil for the potatoes. While that was heating up, I cleaned up the mess I left behind.

Next it is time to move on to the potatoes. First I peeled them ready for the pot.

While the potatoes are boiling away, I added a tin of chopped tomatoes to the cabbage mix.

The cabbage is really starting to take shape now. The next ingredients I added next were some salt, pepper and frozen dill. Mix that all in and let it simmer on a lower heat.

After around 30 minutes, the potatoes should be done. Stick a knife into a couple of potatoes to check they are nice and soft through. I chopped the potatoes small so they should boil faster.

Once done, I then proceeded to mash them with my special masher tool. You can add some margarine if you would like them less dry.

I check the cabbage and do another taste test.. it's tasting pretty awesome! Who knew you could get so excited about a cabbage dish?!

It's time to plate up, the dish is hearty but also light. It has a tasty watery sauce with lots of flavor. You can mop it up with the mash or some bread even.

I roughly put some scoops of mash to go with it. My wife has returned from her errands and is impressed with the taste. Bigos ala Vegan - enjoy!

Great recipe! I think I've made something similar before. I didn't know that the roots of this dish were in Poland...

This recipe is simple, tasty and filling, Steve. I really like the use of cabbage, because it adds texture and volume to the dishes, plus the onions with the tomato give it the ideal touch, and accompanied with potatoes, it is a delight.

I have a question, how much potato have you used? It would be ideal if you edited the post and put that information in the list of ingredients, that is, how many kilos or grams of potatoes you have used.

I mean, were they starched or low-starch? I find it oftentimes difficult to make mashed-potatoes with low-starch potatoes.

Oh Im not sure about the starch, but the newer season are usually the best. In Aldi they have only 1 or 2 types, so not much choice there!
