Sandwich de puré de arvejas y tomate asado


Hi, friends! Today's recipe has a little more technique because I love easy recipes but I also really love cooking and a good flavor-loaded dish. Following a vegan path make us miss flavors such as egg or tuna sandwich, and steaks, but the flavor we miss usually comes from the seasoning, not the meat itself (Not trying to lie, of course, the meat has flavor, but it's not completely what we miss) the texture also plays a good part. So, vegan recipes to help with meat cravings must target seasoning and texture (along with amino acids and protein content). I think about this a lot because most vegans are so because of a moral decision, not because they hate the flavor of nonvegan food, and I like to make it easier.

¡Hola amigos! La receta de hoy tiene un poco más de técnica porque me encantan las recetas fáciles pero también me encanta cocinar y un buen plato cargado de sabor. Seguir un camino vegano hace que echemos de menos sabores como el huevo o el sándwich de atún, y los filetes, pero el sabor que echamos de menos suele provenir del condimento, no de la carne en sí (No intento mentir, por supuesto, la carne tiene sabor, pero no es del todo lo que echamos de menos) la textura también juega un buen papel. Por lo tanto, las recetas veganas para ayudar a los antojos de carne deben centrarse en el condimento y la textura (junto con los aminoácidos y el contenido de proteínas). PREPARATION | PREPARACIÓN

I have two ingredients that actually have some preparation with days of anticipation, you can just buy the sprouts or use fresh cabbage, but my sprouts are from mung beans, and these are five days old.

And the cabbage I cut very thin, in a bowl I added 2 tbsp of salt and crush it, kneading it until it released its juices, then put it in a jar with vinegar and a little bit of sugar. It has there one day out of the fridge and one inside it. It just gives it a mild sour flavor and changes the texture, it´s still crunchy but softer.

Tengo dos ingredientes que en realidad tenien una preparación con días de anticipación,aunque pueden simplemente comprar los brotes o usar repollo fresco, sin embargo, mis brotes son de frijol chino, estos tienen cinco días.

Y el repollo lo corté muy fino, en un bol añadí 2 cucharadas de sal y lo aplasté, amasándolo hasta que soltó sus jugos, luego lo puse en un frasco con vinagre y un poco de azúcar. Tiene allí un día fuera de la nevera y otro dentro de ella. Sólo le da un ligero sabor agrio y cambia la textura, sigue siendo crujiente pero más suave.

The green beans must be boiled and soft to begging with, use a blender or immersion blender to puree them, you can also smash them, just don't get them too soft, blend just a few seconds until the beans are broken but don't look smooth and liquid. Let it cool down.

Then cut everything very thin, grate the ginger, and smash the garlic. I have mine in oil with rosemary and they are easy to smash and you also have aromatic oil.

In a pot with low heat, put there the oil, onion, ginger, garlic, and chili for a minute, we don't want to cook them, we want to activate the flavors and aromatize the oil.

Las arvejas deben estar hervidas y blandas para empezar, utiliza una licuadora o una licuadora de inmersión para hacerlas puré, también puedes aplastarlas, pero no las ablandes demasiado, licúa sólo unos segundos hasta que los granos se rompan pero no parezcan lisos y líquidos. Deja que se enfríe.

Luego corta todo muy fino, ralla el jengibre, machaca el ajo. Yo tengo los míos en aceite con romero y son fáciles de aplastar y además tienes aceite aromático.

En una olla a fuego lento, pon el aceite, la cebolla, el jengibre, el ajo y el ají durante un minuto, no queremos cocinarlos, queremos activar los sabores y aromatizar el aceite.

After that, just mix all the chopped ingredients, the activated aromatics, about 2 tbsp of lime juice, salt, turmeric, and the cabbage, it can be as I explained before, or just fresh thinly cut cabbage. The puree is done, reserve it on the fridge.

For the tomatoes, slice them into quarters or into sixths depending on how big your tomatoes are. Take out the seeds so the tomatoes can flatten. Then spread oil on a baking sheet, place all the slices and cover with all the seasoning, more oil, put some garlic in there, some onion cut into julienne strips, and bake until they look darker and shrink almost half of their volume. Don´t let them burn or completely dehydrate.

Después, sólo hay que mezclar todos los ingredientes picados, los aromáticos activados, unas 2 cucharadas de zumo de limón, la sal, la cúrcuma, y el repollo, puede ser como he explicado antes, o simplemente repollo fresco cortado bien fino. El puré está hecho, resérvalo en la nevera.

Para los tomates, córtalos en cuartos o en sextos dependiendo del tamaño de tus tomates. Quita las semillas para que los tomates puedan aplanarse. Luego unta una bandeja de horno con aceite, coloca todas las rodajas y cúbrelas con todos los condimentos, más aceite, pon un poco de ajo, un poco de cebolla cortada en juliana, y hornea hasta que se vean más oscuras y reduzcan casi la mitad de su volumen. No dejes que se quemen ni que se deshidraten del todo.

Now we just assemble the sandwich. Here is how I did it:

Brush the bread with oil and toast it in the oven or a pan, however, you like. Add a generous amount of green peas puree, then add the sliced tomato, topping with fresh sprouts.

The puré is fresh and lemony with lots of texture, the tomato is loaded with flavor, and both have a little spicy punch. The sprouts are crunchy and give freshness to the sandwich. I toasted the bread separately because I want the filling to stay fresh, and it tastes better that way.

Ahora sólo hay que montar el sándwich. Así es como lo hice yo:

Unta el pan con aceite y tuéstalo en el horno o en una sartén, como quieras. Añadimos una cantidad generosa de puré de arvejas, y a continuación añadimos el tomate asado, cubriendo con brotes frescos.

El puré es fresco y alimonado con mucha textura, el tomate está cargado de sabor, y ambos tienen un pequeño toque picante. Los brotes son crujientes y dan frescura al sándwich. Tosté el pan por separado porque quería que el relleno se mantuviera fresco, sabe mejor así.

This is another way to present this plate, I thought about it after making the first sandwich, it is so good as a snack for a party, to go with drinks, and so on. It has good color, very attractive, and it tastes very fresh, mildly spicy, and very filling, so if you have friends over and want to make something light for dinner, this is a great option. Just so you know, I don't throw away the seeds, I cooked just as I did the slices and used them as a topping for our lunch today. I know there are people who don't consume tomato seeds but I can't see myself throwing away perfectly good food.

Para que lo sepas, no tiro las semillas, las he cocinado igual que las rodajas y las he usado como topping para nuestro almuerzo de hoy. Sé que hay gente que no consume las semillas de los tomates, pero no me veo tirando comida en perfecto estado.

Muchas gracias comentar, me alegra que te provoque, es la idea jajaja. Sabe demasiado rico, ayer acabamos comiéndolo como 3 veces, hice los sandwich, después mi hermana hizo unas tortillas de harina y les pusimos lo mismo de relleno encima, y en la cena como aún quedaba puré, pues con las arepas

Jajajaja...y chévere...porque se puede hacer un montón y almacenar en frascos esterilizados así tenemos para el momento de cualquier antojito.

Sí, tener allí esa opción es genial, siempre ando buscando en la nevera qué echarle a lo que ando picando xD. Eso sí, aprendí hace poco que las arvejas son bastante más delicadas que las caraotas o lentejas, así que si no se sabe hacer bien la esterilización, es mejor preparar solo lo que se va a consumir en el día.
