Hello my dearest Foodies,
So I made a very short video to show you an easy way to dip truffles into chocolate and I was trying to publish it on Dtube, unfortunately, I was not able to. After the video was finally uploaded, which took forever, I got notification that unknown error occurred and that was that! No problem at the old YouTube, lol. So here I am and it's already midnight, so I better hurry up.
Anyway, these truffles are easy to make and you don't need any special tools. They are absolutely to die for and full of nutrients. Much better for you and your loved ones than Ferrero Rocher. Also, they are great addition to your Holiday table.
FESTIVE TRUFFLES
Chocolate Truffles with Rum Flavor & Hazelnuts
Vegan βGluten Free- Refined Sugar Free

INGREDIENTS FOR 16 TRUFFLES
β’ Pitted dates 1 cup (soaked for 15 minutes and drained)
β’ Almond flour 1 cup
β’ Rum or rum extract 1tsp
β’ Cacao powder 3tbs
β’ Virgin coconut oil ΒΌ cup (melted above the steam)
β’ Canned coconut cream ΒΌ cup (only the thick part)
β’ Hazelnuts 1 cup
β’ Mini ice cream scoop
β’ Tooth picks
β’ Tray lined with parchment paper.
PROCESS
β’ Save 16 whole hazelnuts and chop the rest in the food processor, transfer into a dish and set aside.
β’ Start blending the dates by pressing pulse button, while scarping the sides and adding rest of the ingredients.
β’ Set the blender at the full speed at the end until you get smooth mixture.
β’ Transfer it into a sealed container and store in a refrigerator for couple hours.
β’ When ready, begging to measure with your ice cream scoop just the right amount of the mixture you need for one truffle.
β’ Take one hazelnut and press it in the middle of your portion.
β’ Scoop it out into your palm and make a nice round ball.
β’ Continue until you have all done and please each on your tray.
β’ When ready, take your toothpicks and gently insert them on top of each ball.
β’ Place them into freeze for one hour, to secure the toothpicks.
CHOCOLATE
β’ Dark chocolate chips 1 cup
β’ Light coconut milk or other plant based milk 1/2 cup (you can add more if needed)
β’ Maple syrup ΒΌ cup (you can add more if needed)
PROCESS
β’ Start by melting the chocolate chips in a small pot over steaming water on medium heat.
β’ When ready, slowly pour the chocolate into the coconut milk in a bowl, while stirring.
β’ Add the maple syrup and keep stirring.
β’ If the chocolate become too thick, you can add more milk.
β’ Take it off the heat and stir some more until completely smooth.
β’ Take only couple balls from the freezer for dipping and leave the rest there. Have a tray ready in the fridge to place them there after you done.
β’ Have your hazelnuts ready on your side and begging to dip.
β’ This part is hard to explain so I made a video.
And don't laugh, I don't have the right equipment to make videos, so it's little bit silly and I had to speed it up little. Otherwise it would be too long and boring. But make sure you pay attention to my fancy apron, lol.

This is such a lovely recipe! I made similar truffles last year for Christmas. My family barely touched them (they refuse to eat anything what I make since it's vegan - I know ridiculous :D) so I ate them with my husband and gifted a few of them to my friends. They were delicious!
You gave me an idea to make them again this year and torture my family a little bit :D I hope they will try them this time though :)

I'm fine with the fact that they don't even want to try. I got used to it. I just feel sorry for them because I see how they simply don't feel good and how their health is getting worse. Especially my mom's health. But she is grown up and she needs to see it for herself..

Actually it is an easy recipe. I have the need it to create desserts like yours... I preffer when steemians share videos on youtube. cause Dtube is very slow, and as you say always give error... i like to think when and ready for cooking gonna took the same time then the video lol. but thats not the true... anyway even the musical selection was great... wonderfull recipe.

I am posting to dtube now after many false starts. Someone told me to log out and log back in directly - not with steemconnect or whatever the other option is. Then - do not try to post videos over 3 minutes. This finally did the trick for me.
Good luck with trying again. I think you would get good attention over there. One minutes videos to the dtubesnap tag can sometimes give you great results :)

However in Italy se have Ferrero Rocher that are chocolates very similar to yours.

Oh yes, I am very familiar with Ferrero Rocher; I mentioned it in my post. It is delicious, but unfortunately, very unhealthy compare to my recipe, because of processed sugar and cholesterol.

howdy MIss Lena! my my my....this is indeed a marvelous surprise. These almost look too good to be true! I mean no white sugar, vegan, gluten free, they gotta almost be calorie free, they're probably Kosher, and I can eat as many as I want to! lol.

Howdy Janton, I am glad you stopped by. I knew these would be something to satisfy your sweet tooth without guilt, lol. Altough, they are not calorie free, but they contain lots of nutrients such a protein, fiber, antioxidants and more. But you should not eat more than couple a day anyway, lol. The thing is, you will be satisfied after one. And than you can have another one later.
Just so you know, vegan is waaaaay above Kosher, lol. Nevertheless, my apron says "GO VEGAN and NOBODY GETS HURT". I got it from Italy as a present form a friend. Anyway, thank you so much, I am happy you like it π

As far as the truffles, I don't know if I could eat just one, they look kind of small and I'm a big eater when it comes to sweets or semi sweets! I would first have to quadruple the recipe for it just to last one day. lol.
As far as kosher, that's for sure but I thought it went well with my joking around. But there are some things the Jewish people don't eat, at least they don't eat pork which I think is yucky, the pork not the non eating of pork!
Oh, so you are not eating pork as well? That's good! Less animal products you eat the better.
As far as the truffles, they are a regular size, just like any other chocolates. I suggest you learn how to have a little bit of guilt free treat everyday, instead of a big pile once a month, or how often you do, lol.
howdy again Miss Lena, did you like the redneck jokes lately? I particularly like the one about the fly. remember that one? No we haven't eaten pork our whole lives except occasionally. We are fairly close to Biblical dietary guidelines and don't eat shellfish or lobster, shrimp. What was your diet like before you started eating vegan?

What was my diet before? Well I grew up in communism, but family manged to get everything and my grandmother had a small garden in the middle of city until communists tear that part down for a modern development and we had to move to new apartment buildings. Nevertheless, shellfish was not available in our country, but I liked it when I came to Canada. Pork was one of the most popular as is in everywhere in Europe. However, I started thinking about going vegetarian just before I came to Canada in 1990, but when I came here, I did not stick with it. It was not the right timing yet.
Miss Lena..so under the communist system you had many shortages of food? Was it all kinds or just fresh fruit and vegetables?
Yuummmmm.. The truffles look really delicious @lenasveganliving. I love that it is all cocoa inside and nicely wrapped in nuts! Thank you for the recipe! It looks fun to make isn't it? But I can imagine myself licking away every chocolate bit and drip and probably eating half before they are served :D They look like a full Ferrero Rocher :) Will the taste change much if I omit the rum, do you think?

That is looking really delicious, I love all sweet stuff and truffles are one of my favorites. I have never thought you can do them at home and in such a beautiful form, very appetizing and the way how you dipped them into chocolate, that was really great. have you tried already one while dipping them into chocolate I would probably do and of course my son definitely will try few so by the time when everything is really we probably are full :) Thank you for this interesting recipe, will definitely try :)
