I would not cut my own market by offering only coffee-to-go. This may be economical under the appropriate conditions (little space, high rental or personnel prices). At least in Europe, I would not expect that the lifestyle of the future will exclusively allow for coffee-to-go. Basically, you need the right atmosphere and peace for the proper enjoyment. Nonetheless I would assume that offering coffee-to-go is a good idea in principle.
In order to be able to do both - reach as many 'to-go' consumers as possible and at the same time to allow the whiling coffee house visitors their peace of mind - perhaps a special form of the counter would be wise: L-shaped, like the one i always see in the Nordsee shops, with the short side inbuilt in the wall facing the streets.
