A friend of mine is on a diet, she taught me this recipe and it is super nice, simple and healthy! You really must try this one time ^^
Ingredients
- olive oil
- chicken herbs
- 2 zucchini's
- 1 thin leek
- 300 gr chicken fillets
- 2 teaspoons of tomato paste
- salt and pepper
- 50 gr grated young cheese
Preparation:
Wash the zucchini, remove the stalk and halve in length. With a teaspoon, hallow the halves out to about 1 cm from the skin. Cut the chopped flesh into pieces. Rub some olive oil over the zucchini's and put them in an oven dish. Cut the chicken fillet into pieces and fry until tender. In the meantime you cut the leeks into pieces and throw them at the chicken, also the leftover zucchini you throw in. Bake about 2 minutes. Then you pour the herbs and the tomato paste. When that's done, fill the zucchini's and sprinkle cheese over it. Put in the oven for 20-25 minutes and done! I always make rice with it,but you can eat it also without rise!
