Assyrian Food Recipe: Kebbé

Delicious Assyrian food

Welcome everybody to another one of my posts. Still in beginning stages of posting on Steemit but nevertheless enjoying it. This time I want to make you happy with a recipe. It's a dish called kebbé and has its origin in the Assyrian culture.

Kebbé

Is a delicious dish from the oven made of fine koftelik bulgur with beef tartar. Filled with a mixture of spicy meat and fine-cut vegetables.

  • Preparation time is quite long: About one hour
  • Cooking time: 45 minutes
  • Yield: About 8 people

Ingredients

The ingredients are devided in two parts: Stuffing and Dough

Stuffing

  • 1/2 paprika red
  • 1/2 paprika green
  • A lot of parsley
  • 700gr ground beef
  • Four or five middle-large onions
  • 1/2 spoon of salt
  • 1/2 spoon of ground chili
  • 1/2 spoon of ground coriander
  • 1/2 spoon of biber salcasi (turkish tomato-pepper paste)
  • 1/2 teaspoon of black pepper

Dough

  • 1kg of fine bulgur (turkish)
  • 850gr of beef tartar
  • cold water
  • 1/2 spoon of salt

Mixing it up!

To make the stuffing do as follows:
Cut all the vegetables in small pieces and bake the ground meat and keep it in small and fine pieces just like the vegetable you cut. Let the moist vaporize and add the vegetables to the minced meat. Bake this for one minute and add the spices.

Taste the mixture and add pepper and salt to your liking.

Now for the dough!

Add some water to the bulgur and mix the whole untill it's all wet and moist. Add the salt en keep mixing it up. Let this mixture rest for ten minutes.

After ten minutes add the beef tartar and knead until the whole is more or less unctuous. During kneading add a little water every once in a while. This can add up to 1/2 liter of water!

Pre-heat your oven to 210 degrees celsius. Take and ovendish and grease it up with butter.

Fill the bottom of the dish with the dough and create a bottom layer.

Like so:

After this you can fill it up with a layer of stuffing:

And spread it out evenly:

Now place some parts of the dough on top and close it all up. Use your wet hand to iron out al bumps in the kebbé

Now use a knife to pre-cut the kebbé:

And put some pieces of butter on top so the food will get a nice color:

Now place this in your oven for about 40 minutes and after that.....Enjoy!!
