traditional and creamy pumpkin soup

The time has come for some classic pumpkin soup.

Ingredients

1 Pumpkin (1.5 kilo)
2 Onions
3 Garlic cloves
250 grams carrots
2 Bay leaves
3 Drops tabasco
Nutmeg (according to taste)
Salt and pepper (according to taste)
Vegetable broth

Instructions

Cut the pumpkin into slices. Remove the seeds, the stringy inside and cut off the skin with a sharp knife. Cut the pumpkin into large pieces. Slice the onion and garlic. Peel the winter carrot and cut it into slices.

Heat the oil in a large pan and fry the pumpkin, winter carrot and onion for 5 minutes. Add the garlic and bay leaves. Pour in the water (1liter) and add the bouillon tablet. Bring to a boil and let everything cook for 30 to 60 minutes.

Remove the bay leaves. Puree the soup with the hand blender and season it with tabasco, pepper, salt and nutmeg. Stir in the crème fraîche with a spoon so that it becomes smooth. Spoon the soup into deep plates or bowls and add a spoon of crème fraîche.

Not something we really have here since pumpkins only come out for one week but it looks tasty so I wouldn't mind to try it.

oh that's too bad! I heard some countries sell pumpkin puree in cans, but to be honest I don’t know if that will have the same effect

but if you do get your hands on one , you should definitely try!

My mom used to call me pumpkin, then when I graduated she would say When you going to get a job! Ah, this recipe takes me back!

Yes i am very happy with it ! In the summer time I cook on a electric stove..but now it's getting colder, always on the old school wooden stove! Love it 💛

Does just the wooden stove keep your home warm? Or do you have another heater for the winter?

Yeah I could see how it would be too hot in the summer for that stove..haha
