Broccoli Sprout and Cabbage Cole Slaw

One thing you'll notice while growing Broccoli Sprouts is how "cabbagy" they smell whenever they need a good rinse during the growing process. It was because of this that led me to thinking about adding them to my favorite cole slaw recipe.

Now, of course unless you already have a broccoli sprout jar ready to harvest, you'll have to either buy them yourself along with the rest of the ingredients, or do what I did and take up farming the broccoli sprouts yourself.

As usual, I started out with my one-quart sprouting jar and 2 tablespoons of broccoli seeds. If you're new to this and need a quick explanation on how to grow sprouts in a jar for pennies per harvest, please read this blog when you have a chance: Sprout Jar Garden (Part One) Mung Beans Even though it's about growing mung bean sprouts, the basic techniques are the same.

Once you've harvested your broccoli sprouts or perhaps purchased them at your organic market, you'll be able to create a slaw with much more airier bites. In other words, with broccoli sprouts or any other smaller sprout such as alfalfa, red clover, (which you could also use), the cabbage surrounds the sprouts instead of adhering itself to other blades of cabbage quite as much.

Main Ingredients:

14 ounces of Shredded Cabbage (Plain or Blended with Carrots and Red Cabbage)
2 Cups Broccoli Sprouts
10 Cherry Tomatoes sliced in half

Dressing Ingredients:

3 Heaping Tablespoons Mayonnaise
2 Heaping Tablespoons Sour Cream
3 Tablespoons Red Wine Vinegar
1 Teaspoon Garlic Powder (No Salt Added)
1 Teaspoon Onion Powder (No Salt Added)
1/2 Teaspoon Black Pepper
1/4 Teaspoon Salt

Wash and drain the main ingredients. While the main ingredients are draining, mix the dressing ingredients into an adequately-sized mixing bowl.

Add the drained ingredients into the dressing and toss thoroughly until they are well coated.

That's it! This batch lasted for a couple of days and was served as a side with grilled cheese toast, and the next in sandwiches in place of lettuce. Enjoy!
