Black Garlic

I received a very unusual Christmas gift from a friend in our little town.

Black Garlic!

I had no idea it existed. It’s a type of garlic used in Asian and high end cuisine. It’s made by cooking the bulbs of garlic at 140°F for a month to six weeks. It essentially gets a low and slow roast that converts sugar and turns the cloves black. The taste is sweet and syrupy with hints of balsamic and can be eaten by itself or added to food.

It’s cost is 15 to 20 USD per pound. Holy cow!

I wonder how they keep them heated at an even temp that long. What a time consuming method to process. No wonder it's expensive. I wonder what variety of garlic is used to make it. Neat!

I understand they use some kind of a cooking pot. Have to do more research.

That's a cool gift! Could you imagine the smell of roasting garlic for a month to six weeks? I mean, I love me some garlic but...yeah. Yikes. Please do tell us how it tastes and how you used it!

I love garlic, this looks very interesting - never knew this existed. That looks expensive though, but it might be worth a try. I wonder where they sell these in the U.S.

It is delicious! You will kind of be ruined for regular garlic after it, though. I have had the pleasure via a meal delivery service and those little special ingredients that they include can really kick the recipe up to another level. I have recently relocated and am working on finding my asian markets because I know that if I went to a regular grocery for this type of item, I would be payed triple what will already be a more pricey ingredient (but rightly so with that amount of time and energy put into each clove!) I appreciate you sharing more information about this coveted ingredient!
