Be a master of making 100% vegan, 100% sugar-free, 100% handcrafted chocolate from beans to bar ๐๐ฑ๐๐ซ๐ซ๐ซ
I was travelling all over Mexico in the last three months, and once I got to Chiapas, I felt like I was in Heaven. There are huge cacao plantations over there and they produce very good quality of cacao. Most of the cacao beans get exported to Europe where the famous chocolate factories create very yummy chocolate bars for us. Although most of them are very tasty, they are usually filled with sugar, milk, etc...
As a vegan diabetic, I was extremely happy to take a course of making 100% vegan and 100% sugar-free Chocolate made of 100% cacao :))))
This is how the cacao fruit and the cacao beans look like. The beans get dried and fermented before starting to make the chocolate. Here in Mexico, you can buy fermented cacao beans in every market per kilo.
Select the beans. The once which have an open skin are not going to be used for a premium quality chocolate.
Toast the beans for 10-15 minutes.
Get rid of the skin after toasting them. The skin gets powdered and this is what we know as cacao powder. The interior is used for making chocolate.
By grinding the toasted cacao beans, it becomes a chocolate.
Stir it a couple of times by a spoon or spatula.
Pour the chocolate into forms and let it cool in room temperature. If you can't wait to eat it, set it in the fridge to shorten the time :D
And voila, your handcrafted chocolate is ready :D
This chocolate is bitter, because I didn't add any sugar or sweetener to it, but I love it this way. Sometimes I drink it as a hot chocolate, then I add a little agave to it.

I didn't think either that it's so simple to make, and I'm so happy I learned it!!! I bought some dried cacao beans in the market, I'm gonna do it at home, too ๐

being in a place where u have access to fresh beans makes all the difference, so delicious looking! i love chocolate making, some beans can be less bitter tasty, its depends, and roasting them makes them more bitter. still its like taking a coffee if u are into that flavour its works. nice job
I've never even thought about making chocolate on my own. I had no idea that it'd be so easy! Your chocolate bar looks amazing, I'd love to try making my own, if I can find some cacao beans from a store here in Finland. ๐ค
