Maintenance Food Sucks

Yeah, fuck you Whole Foods salad bar.

I despise the fact that I have to eat to live. Why? Because 90% of the food I put in my mouth tastes like shit. I've worked in those maintenance places, and trust me, there's no love or thought put into your Whole Foods ham sandwich.

In fact, they have a great policy of taking food that's going to the dumpster and "repurposing" it into hot food to save money. You take that food home and put it in your fridge and let it rot for days past when it should have been dumpstered.

Yeah. Fancy.

I want to take a moment for positivity. Food is amazing. I love a perfected course, or fresh paired foods that excite me. When flavors are new and exciting, or if I am creating something I am excited about, my little heart swells... Not unlike some sort of chef Grinch.

There is also a huge dichotomy in the restaurant industry. In most places, anyone FOH (servers, bussers, hosts) walk with insane amounts of money, while those slaving over your meal on their feet longer than most people are awake are paid next to nothing. Food prices are insanely competitive, food costs are rising, and the leftover margins are split up so the kitchen staff makes pennies. When I open my restaurant, everyone will be paid a living wage, even if it means I won't be.

So, I hate maintenance eating. I wish I could only eat when it is a luxury and not a necessity. My love for food is intense, and I never want to dilute it by eating shitty things.
