Stuffed Sweet Potatoes w/Garlic Tahini Drizzle 🍠 - Food Photography

So today is National Avocado Day, and you guys know avocado is like the best fruit out here right? Ok maybe watermelon is #1 but avocado is still pretty great! Very creamy, versatile, and a great addition to salads so that you don’t need to use a dressing. Also, who doesn’t love guacamole!? 

I thought these stuffed sweet potatoes topped with the celebrated fruit was the perfect way to celebrate avocado day, and I think it’s something you should try too ;) 

These are full of healthy fats, carbohydrates & loaded with vitamins & minerals to fuel the body and keep it running efficiently! So what do ya say? Sweet potato time?! 🍠

Stuffed Sweet Potatoes w/Garlic Tahini Drizzle 🍠

Ingredients:

  • 4 medium sweet potatoes
  • 12oz of tomato purée
  • handful of sliced mushrooms
  • 1/2 diced onion
  • 2 large handfuls of spinach
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 4 cloves of garlic, minced
  • 1 tbsp tahini
  • 3 tbsp water
  • juice of 1/2 lemon
  • pinch of salt

Instructions:

  1. preheat oven to 400°F
  2. place washed sweet potatoes on a non-stick baking tray and place in the oven for 45 minutes to an hour, until baked to perfection
  3. while they are baking, add onions and 1/2 of the minced garlic to a sauce pan with water and sauté until onions are translucent
  4. add the mushrooms, spinach, corn, peas and tomato purée and heat until spinach has wilted down
  5. prepare the Tahini sauce by adding Tahini, water, lemon juice, salt & remaining minced garlic to a bowl and whisk together; add more water if you want it more runny, and less water for a thicker sauce
  6. once potatoes are done, cut in half but not all the way through, and fill with the tomato filling. drizzle the Tahini sauce on top & top with avocado & more garlic if desired! 
  7. Enjoy!! 🍠

I remember what my grandmother used to do with avocado, she would crush it up and put milk in it and served it as dessert. I think whatever you made can be placed at colourfulphotography haha.
