Ingredients:
- Chocolate biscuits, 450 grs
- Lard, 150 grs
- Sugar, 250 grams
- Lemons, 2
- Egg whites, 4
- Unflavored gelatin, 10 grams
- White cheese, 200 grs
- Milk cream, 200 grs
- Sugar glas, 4 Tablespoons
preparation:
- Grind the cookies, mix them with the soft lard and reserve. Place the sugar in a bowl with 4 tablespoons of water and the juice of the lemons. Boil until it takes a thick thread. Pour slowly over beaten egg whites to a snow point, add the gelatin diluted in two tablespoons of water and continue beating until the preparation warms up (use an electric mixer, if possible). Mix in a wrapping way with the white cheese and whipped cream with the sugar glas.
- If desired, aromatize with vanilla essence and with 2 tablespoons of lemon zest.
- Choose a rectangular mold, cover the base with butter paper, distribute half of the cookie dough, match and arrange the lemon cream. Distribute the rest of the biscuit cream on top and bring to refrigerator for 4 or 5 hours. After that time, unmold and keep in refrigerator.
