Over the years we've collected 4 or 5 varieties of Jerusalem artichokes. However, for the life of me, I cannot find where the rest are growing and I've been digging around aplenty! Still, I wanted to share the two most common types we grow.
The one on the left, with reddish stripes, tends to make a tad smaller and rounder, more uniform tubers. A tuber such as the one at the top is not common.
While the white variety is all about weird tuber shapes which are a bit harder to clean, but the upside is that variety is super productive, almost twice the red one per square meter.
With luck, I'll be able to find the other varieties and share a photo!
