Hi everyone, today I'm learning to cook from my mom's recipe. A common dish in our place is flour fried chicken with sambal terasi as a complement. In my own country, there are many types of chili sauce, each region has its own special sauce. Sambal terasi recipes vary hugely within indonesia. Terasi is Indonesian shrimp paste.
In my family, a meal without sambal is incomplete. Our family is also a lover of spicy food. Well without further ado here is the recipe.
This recipe serves 10 people.
Flour fried chicken ingredients:
- 1 kg chicken
- Seasoning ungkep (I bought ready-made in the market)
- All-purpose flour
- Cooking oil
Chili paste ingredients:
- 2 tomatoes
- Red chili
- Cayenne pepper
- 2 cloves of garlic
- 8 cloves shallots
- Terasi ( Shrimp Paste)
First of all, we express the chicken with the spices that have been purchased earlier, then add water and cook until the chicken is tender.
After the water has shrunk and the chicken has started to cook, make a wet and dry dough as a batter to make flour fried chicken. All-purpose flour is made dry and mixed with water.
Fry the chicken until the color is browned and then drain.
Chili sauce making :
Heat the cooking oil, this is optional if you want to use water too, put the chili ingredients into the oil, just briefly until it releases the aroma.
Burn the shrimp paste on the fire, this is the key, burned shrimp paste will produce a more fragrant aroma.
Puree the burnt shrimp paste using a cobek/mortar, then mix it with the other chili sauce ingredients that have cooled down and puree it using a blender.
After smooth, cook for a while on the wok to make it more unified.

Sambal is ready to serve...
Don't forget to boil vegetables for additional fiber. I boiled chayote and corn for extra fiber.
Serve with warm rice 😋
