One-Pan Sausage with Veggies & Mushroom ~ Qurator's: Hive Top Chef! | Sausages

Hello Hiveans and @qurator! How are you? Hope everyone is fine and having a good day wherever you are.

I love one pan meals and I think it is a simple cooking technique and is loaded with all the beautiful colors of your favorite vegetables, baby carrots, potatoes, bright yellow, red and green bell peppers, zucchini, mushrooms and of course the star of the meal jumbo sausages. After all the mixing and stirring, they are seasoned with salt, pepper and Italian seasonings for that perfect balanced taste. This delicious, super easy and healthy meal comes together in under 30 minutes! One pan meal is always a choice for quick, easy, healthy and best of all, they’re effortless. Just one pan, perfecto :D

One-Pan Sausage with Veggies & Mushroom

Ingredients

5 Jumbo sausages cut into 3 each.
2 potatoes, diced.
1 red bell pepper, de-seeded and diced.
1 yellow bell pepper, de-seeded and diced.
1 green bell pepper, de-seeded and diced.
1 zucchini, diced.
1 cup cherry tomatoes, cut into halves.
1 cup baby carrots.
1 cup shitake mushrooms, sliced.
1 cup oyster mushrooms, sliced
2 cloves garlic, minced
1 onion, diced
Olive oil
1 tablespoon Italian seasoning
salt
black pepper

METHODS

  1. Cut the jumbo sausages into 3.

  2. Prepare and cut all vegetables ingredients as indicated in the list above. Sliced mushrooms.

  3. Heat oil in a pan over medium heat. Add the potatoes and cook until golden brown and tender. Remove the potatoes from the skillet and set aside.

  4. Add the sausages to the same pan and cook until browned. Set aside with the potatoes.

  5. Fry onion and garlic until tender.

  6. Add the baby carrots, mix well and leave to cook with lid on until tender.

  7. Add in all vegetable ingredients. Mix well and leave to cook for 5 minutes.

  8. Add the potatoes and sausage back into the pan.

  9. Add mushrooms along with the Italian seasoning. Season with salt and pepper to taste.

  10. Garnished with coriander leaves, black olives, ground black pepper and paprika for a little kick! Wala! ready to serve, Yummy!
