I joined a Pici pasta-making class recently in Tuscany, and now let's go through the fun process together!

Pici is a type of thick Italian pasta that originated in the Siena region of Tuscany. Its shape looks like Japanese udon noodles.

The dough is usually made from flour, water, and olive oil, while salt and eggs are added in some recipes. After the dough was kneaded, rested, and cut into strips, the hand-rolling started. It required some practice as well as patience. :)

At last, add the Pici and a pinch of salt to the boiling water and cook for about 5 minutes. Let the boiled pasta sit for a minute, then drain.

It can be enjoyed with a variety of sauces such as the 2 types we had: cacio e pepe (cheese and black pepper) and aglione (tomato sauce with garlic). I also loved the ragù meat sauce and the porcini mushrooms that went with the Pici in some local restaurants.



最近学了做意大利面Pici,这种尖头实心梭面就发源于托斯卡纳地区,外形类似日本的乌冬面,成分只需要面粉和清水,有时候也会加橄榄油、盐和鸡蛋。

面粉加水揉成面团后,擀薄,切小条,再用手一条一条搓细。面条搓好后加盐煮5分钟左右,捞出晾凉,最后配以酱汁就可以开吃啦。

这种面条香味浓郁、口感筋道,适合搭配浓稠的酱料。厨师给我们配了两种口味的,分别是黑椒奶酪和番茄蒜酱,都很美味。我在当地餐馆还吃到伴有ragù肉酱和牛肝菌的,也是绝配,非常好吃。

厨师是个典型的意式搞笑小哥,风趣幽默、段子频出。说掌握好做意面很有用,比如自己在瑞士念书时,提议去宿舍做手工面就是他追女生常用的方法,屡试不爽XD。

他看到我搓面迅速,惊叹说每次教做面时亚洲人似乎都很熟练。我露出迷之微笑,心想这跟咱们兰州师傅出神入化的拉面比起来,也太小儿科啦,便在手机上找来拉面的动作片给他看。他继续惊叹,连说要去中国学手艺,我说可以可以,去吧,当代马可波罗:)。

The chef said it's better to roll only with hand palm rather than fingers, so the thickness can be uniform along its length.
Put the rolled Pici on a tray with Semolina flour, and sprinkle some flour onto the pieces to stop them from sticking together:

厨师教导说只用手掌内侧搓面,而不要也用手指部分,这样可以让首尾粗细更均匀。
搓好的面条放在撒有粗粒小麦粉的托盘里,以避免黏在一起:

Getting a bit bored rolling the same shape repetitively, so I started to experiment, but they were not accepted unfortunately😆:

总是搓一样的长条状有点无聊,我就开始弄些其他花样,比如笑脸、祥云、便便💩之类的,但很可惜,这些都被厨师无情拒之锅外😂:

We had the cooked Pici with 2 different sauces: cacio e pepe and aglione...
They were particularly tasty when you made them yourself. :D
