Pretty Fall Foliage - Fried Catfish & Rice for Dinner - by Sunscape

I managed to find a few colorful Maple trees this fall and will share them with you today along with the Catfish dinner. ;-)

Now that my gardening season has come to an end for this year, I can catch up on posts that had been put on the side burner. This one is frying Catfish that my brother brought me from Virginia. Every time he visits he brings me goodies to make.

Firstly, I make sure the fish is patted dry with a paper towel before preparing it to fry.

This is a classic recipe, seasoned breadcrumbs, salt & pepper, some Old Bay seasoning and beaten eggs for dipping. It only takes a few minutes to make, and it is simply delicious.

Once the oil is hot, fry the fish on each side for a few minutes until golden brown.
Let it rest on a paper towel to absorb any excess oil, then serve.

I had some leftover Teriyaki Rice and a fresh cucumber to accompany the Catfish. I like to drizzle fresh lemon juice on my fish; hubby likes tartar sauce. Which do you prefer?

Do you have a favorite way to fry your fish? I would love to try a different way next time I want a fish fry.

These two Maple trees were so beautiful in front of my niece's home. I wish I had this type of Maple tree in my yard to enjoy its beauty every year. The one I have only turned brown and is the last tree to drop its leaves.

I have no idea what type of shrub this is, but I had to take a picture of the purple berries. It is along the driveway where we take Mika for grooming. I wonder if they are edible, I bet someone will let me know.

I loved this Zinnia with a bit of scattered red throughout the petals. I saved seed from this one and hope that it will produce the same results next summer.

The white Hydrangea bush next to the pond had beautiful coloring on the leaves the colder it got the prettier it became. This week it is cold and rainy so no more porch time for Mika and me. and it is time to transition being indoors.

Mika taking a nap in her bed while I vacuum the carpet. She doesn't like it when I move her stuff, lol.

Sort:  

If I get a nice piece of haddock then I fry it in exactly the same way as you have done.. Tartar sauce all the way hehe

I love Haddock, it is so nice and meaty and with tartar sauce it would be excellent.

Yes it really is. I alternate between poaching smoked haddock in milk and then frying haddock in breadcrumbs like you did here.

For frying fish I use your sams way by the way looks well fried and good and I'm amazed by the colour of the threes so read leaves 😍😍

I missed the Maple Trees. When I look at it, it feels us something better. It's attractive and seems it has a lot to tell.

The Maples are beautiful for sure and yes Mika is a little love bug for a dog.

My husband used to go catfishing in the Connecticut river decades back. It was so polluted that they never kept what they caught. They'd go at night. So I've never had catfish.

I've always put lemon juice on my fish because I never had tarter sauce. But it dawned on me recently that maybe my summer squash relish and mayo might make a nice tarter sauce, so I tried it and it does!

It seems to me I should know those berries, but no name comes to mind...

Your husband love to be outdoors, didn't he? He reminds me of my dad, always hunting and fishing for everything. I bet that the relish and mayo would be perfect, I've done that in the past, and it was just fine and tastier than that store bought stuff. Darn, Pam I was counting on you to know that blue berry on the bushes. You know so many kinds of plants. I'm going to see if I can search it out. Okay, I found it, it is an American Beauty Berry.

Ok, I did know that! I just couldn’t bring the name to mind. I thought of getting one of those at one point.

My husband was outside every chance he could. I think it’s what kept him going for over 20 years after being told in 1998 he had 1 year to live. He had the farm to care for and 10 years later all the animals. He didn’t like hunting so much because it hurt to sit still so long. But he adored deep sea fishing and went as often as he could afford to.

Fresh fish for me any day! I use very much the same method, but mostly roll the fish in seasoned flour. Crumbs are more crispy though! And, lemon juice for me, please!
The colours of those maple trees are stunning @sunscape.

Thank you, Lizelle, lemon always. I sometimes use just flour for the fish but like a little crunch more often. The Silver Maples really put on a show this year. So Pretty!

Fresh fish yummie , and also very nice autumn colors in those maple trees , over here it's the cat always snoring on the couch :)

Hahaha, cat snoring on the couch and mine snoring on my bed. lol The silver maples were outstanding and so was the fish fry. Thanks for the visit. ♥

Makes me hungry by looking at it. I like it with lemon too. Or sometimes lime. Hehe.
