A happy and glowing day to hive community. I am excited to share a sumptous vegan recipe Vegetable stew. In this dish we can use any vegetables available. It is best accompanied with rice or even serve it as a soup. This is not only a delicious recipe it is also serves as natural medicine in our overall healthy. Let's get started how I prepare our vegetables stew curry.
Ingredients:
Carrots 2pcs. Med.
Moringa drumsticks 3-4 sticks
Potatoes 2 big
Green beans 50 grms
Fresh Coconut (1 pc )(extracted)
Coconut cream ( can ) 2pcs. 300grms
Onion 3-4 (as much as you want )
Green chili 5-6 pcs.
Ginger& garlic paste( 3cloves/ 1 inch )
Cardamom 3-4pcs
Cloves 3pcs.
Black pepper (ground) 1tbspn crush
Methods:
Prepare washed, sliced , chopped vegetables
In a pot or pressure cooker, add in all vegetables, onion and fresh coconut milk extract.
In here I used pressure cooker to lessen my time of cooking, (it is not necessarily to cook in pressure cooker if it is not available.)
Wait till 3 whistles blows up.

Meanwhile... In another pot. Heat oil, Saute ginger garlic paste, curry leaves and green chili. Saute till raw smell is gone
Add in onion, cloves, crush black pepper & cardamom.
Saute onion till well cooked and brown.
Add in coriander powder , turmeric powder, salt mixed / saute altogether.
Add cooked vegetables to the sauteed masalas. Mixed and stir .
Add in coconut cream, mix and stir.
Simmer for 3-5 min. Then it will be ready to serve.
Enjoy a sumptous vegan meal.
