Another wonderful meal, including many ingredients that I have never heard of before. I was always concerned about the lack of variety that following a vegan diet had to offer. Well, every time you post one on your meals, I realize just how wrong my thinking is.

Seeing the multi-colored cauliflower is also a first, who would have ever thought that cauliflower comes in a
rainbow of colors. We grow cauliflower, and always cover the head as it starts to grow to help preserve the white color.
The farmer's market you go to is the real deal.

My mind is still constantly blown by just how many edible plants there are out in this world of ours. I'm sure I won't hardly make a dent in getting to try them all, but by golly I'm going to do my best to try. ;)

I usually only see the white cauliflower, but a few of my farmers also grow Romanesco which is so gorgeous with its vibrant green color and fractal shapes. I truly am so lucky to have access to such an amazing market. I just tried pineapple guava from one farmer who often tries to grow all kinds of different things just to see if he'll have success in our climate with something new. I only wish everyone could have such availability and access to wholesome, interesting foods. Might make it a lot easier to eat healthy. 💚
