This is because fish is very difficult to find even though Indonesia is a country with the widest waters compared to plains, that's why preserved fish is a food that is often found.
Consuming preserved fish comes from the difficulty of finding markets in ancient times, because markets were always open on weekends, so preserved fish is the solution to this problem, so fresh fish is very difficult to find and it would be very dangerous to consume treated fresh fish so that it is always fresh with use. borax and other chemical preservatives.
Now, finding fresh fish is very easy, because technology is getting more sophisticated and transportation from upstream to downstream is getting easier, so the distribution of fresh fish is very easy and helpful. However, because of this tradition that has been passed down for generations, many parents still stock anchovies at home as a side dish. Apart from the delicious taste, very practical processing and very easy storage are things to consider.
My husband really likes anchovy, because it tastes delicious and crunchy. The anchovies are very tasty and taste like salty crackers, especially if they are prepared with a little chili so that there is a bit of a spicy, savory and crunchy sensation all together. I like to cook anchovies because if they are prepared properly, this side dish can last for days at room temperature and there is also no one in our family who does not like salted fish.
Well, this time I want to share a little information and recipes about processing or cooking anchovies, especially Medan anchovies. One of the pride of being Medanese is that we have an anchovy that only exists in the city of Medan, even though the anchovy looks the same, the taste is very different. Medan anchovy has a salty, savory and crunchy taste, a little difficult to describe because I also rarely eat other anchovies besides Medan anchovy.
If you have anchovy stock at home, there's nothing wrong with trying this recipe at home. A very easy recipe to recook in your kitchen, guaranteed if you follow step by step it will minimize failure in cooking this stir-fried anchovy. So, here's the following Sweet and Sour Anchovy Saute recipe, check this out!
Before making Sauteed Sweet And Sour Anchovies, it would be better to prepare tools and materials. In making Sauteed Sweet and Sour Anchovies, the ingredients needed are very diverse, while the ingredients needed are as follows;
Ingredients;
- 200 gr of field anchovy
- 6 red onions
- 2 cloves of garlic
- 10 pcs cayenne pepper (adjust to your spicy taste)
- 1 segment of ginger
- 50 gr of palm sugar
- Tamarind acid
- 2 pcs bay leaves
- 1 lemongrass
- 1 tablespoon of sweet soy sauce
- 50 ml of water
How to make Sauteed Sweet And Sour Anchovies;
- Clean the anchovies slowly, then soak and wash the anchovies. The goal is that the anchovies are not too salty and crunchy.
- Heat cooking oil, fry the anchovies in a deep fryer, then when they are crisp and crunchy, remove and set aside from the oil.
- Wash the shallots, garlic and cayenne pepper thoroughly. Then thinly slice the seasoning as a stir-fry seasoning.
- Heat 2 spoons of vegetable oil and heat it in a wok pan, then add sliced onions and cayenne pepper. Also add aromatic spices such as lemon grass, ginger and bay leaves.
- Soak tamarind acid with 50 ml of water, then pour it into the seasoning stir fry. Also add brown sugar and stir until well blended. The purpose of giving tamarind acid, soy sauce and brown sugar is to make the seasoning sour and sweet, it will add a delicious taste to the stir-fried anchovies. Turn off the heat when the spices are slightly dry and thickened. Let it cool down.
- Put the fried anchovies into the cold spices, the aim is to keep the anchovies crispy and can last up to 2-3 days at room temperature.
- Sauteed Sweet and Sour Anchovy is ready to be served as a side dish for family lunch! Good luck.
