Hello, everyone. I haven't been actively posting these days so now I'm back a with a new post.
Today I want to share my mom's recipe for cooking a Not-Bitter Stir Fried Bitter Gourd. This is one of my mom's favorite dishes and she cooks it pretty often at home. Sometimes she will also cook for her colleagues upon their requests because many of them really love my mom's version of Stir Fried Bitter Gourd. This is a really simple one and I'm sure a lot of you who have cooked this dish probably have the similar recipe and technique to cook it too. So here are the few steps:
INGREDIENTS
First of all, you're gonna need everything on the list below as the basic ingredients:
- Bitter gourd
- 20 small red/purple onions
- 5 cloves of garlics
- Long green chili (This one is optional. You can use chili pepper or green chili pepper, replace them as you like but I honestly prefer long green chili because it's less spicy)
- Salt
- Flavor enhancers (I use a local brand Royco for this one but any flavor enhancers will do)
Note: For the amounts of long green chili used, you can suit it to your likings or how big of the portion you're going to cook.
THE STEPS
Now onto the brief overview of the process:
Prepare the bitter gourd and slice them into thin slices (Don't forget to remove the seeds because it also helps to reduce the bitterness). After that take a bowl and put the sliced bitter gourds into it. And now, we're gonna rub them all with salt and marinate them for 30-40 minutes at max. Just a little note, you should never skip this step because it is the main technique to actually take the bitterness out of the bitter gourd.
As we wait for the bitter gourd to be fully marinated, slice all the red onions, garlics, and the long green chili into thin slices and put them into another bowl so it can be easier to cook them later.
After 30 to 40 minutes, heat the pan and put a decent amount of cooking oil into it. If the oil is heated enough, put the sliced red onions, garlics, and the long green chili and stir them all as you cook it (don't forget to put the salt and the flavor enhancers for the seasoning) and when they are about 60% cooked, put the marinated sliced bitter gourd and mix them all together.
Wait until you feel like it's cooked enough and done! Not-bitter stir fried bitter gourd ready to be served. A pretty simple yet delicious and healthy one that you can cook easily at home.
