Spring salad with mustard vinaigrette | Growing your own food is life changing

Growing food in your own garden can be a life changer. I prepared this refreshing saldad on this hot spring day.

I love the purple salad, it's really interesting and tasty.

Of course, there has to be green salad in the garden too.

Wild rocket, its a bit spicy but I love how it tastes and looks like.
Around the garden, there's a lot of red clovers. They are good for the soil and they are beautiful and delicious in a salad or a smoothie.IMG_20220513_123727.jpg
Red and white radishes grow fast and they are great in early spring, when there is not a lot of fresh vegetables to harvest yet. IMG_20210613_161413_1.jpg
Spring onions are very tasty and we can use the green part too. I love them in a salad and in stir fry dishes.IMG_20220506_141606.jpg

Last season, I canned baby corn and I used some in the salad too. Baby corn is sweet and it comes out nice preserved in vinegar. I'm sure I will grow more of them this year. I made a simple vinaigrette out of mustard, balsamic vinegar, olive oil and sea salt.

Ingredients:

  • 150 g of farfalle pasta
  • wild rocket
  • green lettuce
  • purple lettuce
  • red clover leaves and flowers
  • 2 spring onions
  • white and red radishes
  • half of a jar of baby corn
  • 3 tablespoons of hemp seeds

Ingredients for vinaigrette:

  • 2 tablespoons of yellow mustard
  • 3 tablespoons of olive oil
  • 3 tablespoons of balsamic vinegar
  • ½ a teaspoon of salt

Preparation:

  1. Cook the pasta 'al dente' and drain it well. Let it cool down. Place it in a bowl.
  2. Wash and drain the salad leaves and flowers.
  3. Drain baby corn. Add it to the bowl.
  4. Wash and chop scallions and slice radishes. Add it to the bowl.

  5. Add the hemp seeds.

  6. In a cup, mix mustard, olive oil, balsamic vinegar and salt.
  7. Drizzle the vinaigrette over the salad.

It looks very good and with the heat it makes more salads appetizing. I had read that hemp seeds have many beneficial properties but I've never eaten them, can they be eaten with the shell on?

If you don't mind a bit of crunchiest under the teeth it's even a better choice as shells also contains nutritions and it's good for digestion system. Of course for more gourmet recipes I would use peeled seeds. 😋

If they are cannabis husks I don't care. Someday I will try it. Thanks
