Crispy Chicken & Fried Rice

Yesterday I tried making some fried chicken for the first time.

I have been watching alot of videos by youtube chefs lately which have given me many interesting ideas to try. This week I wanted to see if I could make some tasty chicken and fried rice to go with it.

The process I used is relatively simple let me show you what I did.

First up we make the coating for the chicken using around 100g of plain flour,2 teaspoons of paprika,2 teaspoons of salt and 2 teaspoons of black pepper.

This is what will give our chicken its crispy coating. This is the part where you can get creative and add what ever herbs and spices you want. For this first attempt I wanted to keep things simple but when I do this next time I'm going to try adding some dried garlic, dried onion ,ground ginger and chicken stock.

Next we mix up 2 eggs, 2 tablespoons of milk and some soy sauce. We are going to coat our chicken in the seasoned flour mix first...

Then dip it in the egg mixture...

Then its back into the seasoned flour for an extra thick coating...

Now we just add our piece of chicken to our oil and let it fry until its nice and golden brown.

See that lovely brown oil in the frying pan? Its loaded up with flavour from the seasoning and the chicken.

We are going to use some of this for frying our rice, if you never tried this before I would highly recommend it, the resulting fried rice is extra tasty!

I drained out around 2/3rds of the oil from the pan and added my egg mixture to our lovely fried chicken oil...

Scramble the eggs up mixing in the flavoured oil...

Then we add our rice, to make good fried rice we need to use rice that was boiled the day before and left to dry over night. If you use rice that is freshly boiled the rice will clump together.

I wanted to try adding some chicken stock to this batch of fried rice. I added around 1/3rd of a stock cube and it really helped add alot of flavour. Chinese takeaways often add the flavour enhancer monosodium glutamate (MSG) to thier rice.Using stock cubes like this is a good alternative to MSG.

Posting these pictures and writing up this post has me wanting to make this dish again today. The results from frying the rice in the seasoned chicken oil then adding some chicken stock and soy sauce really made for an incredibly tasty and very moreish fried rice which was on par with the best I have had from a takeaway and alot better than many takeaways I have bought from in the past.

This chicken was also very tasty but I think adding some dried garlic powder, dried onion powder and fresh ground ginger would kick the flavour up into a whole new realm of tastiness. Stay tuned I will try that in a future post.

This would also result in even more flavourful oil for frying our rice in...damn I have made my self hungry....I think I know what I'm going to make for dinner tonight again! :)

In here we use fresh steamed rice but with dry texture, different from general texture for daily eating :)
