Friends have a wonderful day, greetings to my fellow food lovers, this time I want to share with you a super healthy and easy recipe for those who can not consume flour. The most important thing is that it is simple and inexpensive to make, and best of all, it is delicious.

Amigos que tengan un maravilloso día, saludos a mis compañeros amantes de la comida, en esta oportunidad quiero compartirles una receta súper saludable y fácil para los que no pueden consumir harinas. Lo más importante es que es sencilla y económica de ejecutar, lo mejor de toda que queda deliciosa.



As in the kitchen nothing goes to waste, I took advantage of the yucca left over from yesterday and turned them into some delicious healthy arepas.

Ingredients:
Parboiled yucca
3 eggs
1 ripe tomato
¼ onion
Basil
salt

Como en la cocina nada se desperdicia, aproveché la yuca que quedo de ayer y las convertí en unas ricas arepas saludables.

Ingredientes:
Yuca sancochada
3 huevos
1 tomate bien maduro
¼ cebolla
Albahaca
Sal



Preparation:

With the help of the grater, which will be our favorite utensil today, we take the yucca and grate it. Once grated, we knead it and it will literally become a silky and homogeneous dough.

Preparación:

Con ayuda del rallador, el cual será nuestro utensilio favorito de hoy, tomamos la yuca y la rallamos. Al tenerla rallada amasamos y literalmente se pondrá como una masa sedosa y homogénea.



We make some spheres and proceed to make arepas, I got 3 with the yucca I had.

Realizamos unas esferas y procedemos a realizar arepas, me salieron 3 con la yuca que tenía.



Grate the onion and pour it in a previously hot frying pan, let it wilt and then add the tomato, grate it and incorporate it in the pan where I had the onion, season with a little salt and pepper and let it unify its flavors and let it release its juices.

Ralle la cebolla y vertí en una sartén previamente caliente, deje marchitar y luego agregue el tomate lo ralle e incorpore en el sartén donde tenía la cebolla, sazone con un poco de sal y pimienta y deje unificar sus sabores y que soltaran sus jugos.



When the tomato is well cooked and has a reddish color, carefully add the eggs one by one, lower the heat and cover for about 3 minutes.

Al tener el tomate bien cocido y verlo ya con ese color rojizo coloque los huevos uno a uno con cuidado, baje el fuego y tape por unos 3 minutos.



When the eggs are cooked add a pinch of salt, serve on the plate and decorate with some fresh basil. I served it with the yucca arepitas and it was a dish that I loved visually and tasted delicious.

Al ver los huevos cocidos agregue una pizca de sal, serví en el plato y decore con un poco de albahaca fresca. Acompañe con las arepitas de yuca y fue un plato que me encanto visualmente y en sabor riquísimo.

As you can see a simple recipe, with few ingredients and best of all healthy, high in protein and nutrients to start the day with plenty of energy, as it has healthy carbohydrates, vegetables and protein.
